Holiday Cake Recipes

Christmas Jam Cake
4 c. flour
2 tsp. cinnamon
2 tsp. nutmeg
1/2 tsp. salt
2 c. raisins
5 eggs
1 c. butter
2 c. brown sugar
2 c. jam
1 c. buttermilk
1 tsp. soda, dissolved in milk

Sift flour, cinnamon, nutmeg, and salt. Mix with raisins. Cream butter and add sugar. Add jam to this batter mixture. Add the flour mixture, alternating with buttermilk. When all flour and buttermilk have been added, add beaten eggs and soda dissolved in milk. Stir thoroughly. Bake at 350 degrees for 45 minutes to 1 hour.

Ice with following

3 c. brown sugar
Butter the size of an egg
1 c. water
1 c. raisins
1 c. dates
2 c. English walnuts

Pound Cake Recipes
A Little History about Pound Cakes
The pound cake got it's name way back in the late 1700s a pound cake contained one pound of butter, one pound of sugar, one pound of butter and ten eggs. 

7-Up Pound Cake

2 sticks butter
1/2 c. shortening
3 c. sugar
5 eggs
3 1/2 c. plain flour
1 (10 oz.) bottle of 7-Up
1 tsp. vanilla flavoring
1-1/2 tsp. lemon flavoring

Cream butter and shortening. Mix together sugar and eggs, then flour and 7-Up and then flavoring. Cook in the middle of oven for 1 1/2 hours at 325 degrees in a preheated oven.

Five Flavor Pound Cake Recipes
1/2 lb. butter or margarine
1/2 c. Crisco
3 c. cake flour, 3 c. all purpose minus 6 tbsp.
3 c. sugar
1/2 tsp. baking powder
5 eggs
1 c. milk
1 tsp. each: lemon extract, rum extract, coconut extract, almond extract, and vanilla extract

Cream butter and Crisco together. Sift flour, sugar and baking powder together. Set aside. Add eggs and milk to butter and Crisco. Mix well. Add dry ingredients to mixture. Mix well. Add flavorings last. Bake in a greased and floured tube pan in a preheated 325 degree oven for 1 hour and 15 minutes. Cool in pan 15 minutes. Invert onto serving plate and cool completely.

Million Dollar Pound Cake
1 lb. butter
3 c. sugar
6 eggs
4 c. plain flour
3/4 c. milk
2 tsp. lemon extract
Bake in a 10 inch tube pan that has been greased and floured at 300 degrees for 1-1/2 hours.
