Here are 2 tips I saw on TV:
Roll out pie dough on Saran Wrap. The pie baker said it takes much less flour
which can make the dough tough. After rolling out, pick up saran wrap , turn it
over the pie pan, and peel off the paper. It looked easy!
To put glaze on a bundt cake, use a ladle. Put glaze around cake center hold,
then on the outside, Sandra Lee used a small ladle. This looked like the glaze
would be much easier to control that putting it on with a spoon.
Need to cut cake layers in half so you have 4 pieces? Put a layer in a pie pan
and use the top of the pie pan as a guide to cut the cake.

I have been wanting to send this recipe ever since you
did the Spam recipes. This was in a magazine in the 60's and my kids loved it.
Also economical meal served with bake beans and a salad.

Skillet Barbecue
1/2 cup chopped Onions
3 tablespoon vinegar
2 tablespoons butter
1 tablespoon prepared mustard
1 cup ketchup
1 tablespoon Worcestershire sauce
1/3 cup water
1 (12 ounce) can Spam cut in julienne strips
1/4 cup brown sugar
Cook onion in butter until tender. Add other ingredients. Simmer uncovered 15
minutes. Serve on hamburger buns. Makes 6 servings.
Sauce also good with leftover ham and used as a barbecue
sauce for chicken.

Spanish Rice
8 strips of bacon
1 diced onion
3 or 4 c. of cooked rice
1 can tomato sauce (medium)
1 can tomato paste (small)
1 can stewed tomato (medium)
1 c. sour cream
Cheese, American sliced in strips
Fry bacon until crisp. Remove from pan, save drippings. Saut?onions in bacon
grease. Combine rice, sauce, paste and stewed tomatoes, sour cream, onions and
crumbled bacon. Put in casserole dish. Lay cheese on top to cover. Bake at 350
degrees for 40 to 60 minutes.

I recently sent in a response to Shirley May in Calif.
request for a Coconut Cake using Creme of Coconut. I meant to add this
note to it but left it out. The recipe calls for real whipping cream, whipped. I
use a bit better than an 8 oz tub of cool whip I think actually a 12 oz
container but this just depends on however thick you want your topping to be so
use your own judgement on this .
In response to a request from Shirley May in Calif had in the April 1, 2008
newsletter wanting a recipe for a Coconut Cake using Creme of Coconut. i use
this recipe a lot. It is very moist, delicious. Hope this is what you are
looking for.
Coconut Cake
1 pkg. yellow cake mix
1 can Eagle Brand sweetened condensed milk
1 can cream of coconut
1 carton whipping cream, whipped
Bake cake according to package directions in a 9"x12" pan. When it is done, poke
holes in cake with a fork. Pour the can of condensed milk and can of cream of
coconut over the cake. Let cool. Spread the whipped cream over the cake, then
sprinkle with coconut flakes.
Note: I use a white cake mix but i put the whole egg in instead of just the egg
whites. I like this just as well as using a white cake mix.

Apricot Fried Pies
1 pkg. dried apricots
1 c. sugar
Rinse apricots and put in heavy saucepan. Cover with water and boil until
tender, covered. Remove lid and continue to cook until about all of the liquid
has cooked out of fruit. Add sugar and cook 2 to 3 minutes longer. Remove from
heat and mash until smooth.
PASTRY:
2/3 c. Crisco
2/3 c. evaporated milk
2 c. all-purpose flour
1/2 tsp. Salt
Oil for deep frying
Combine flour and salt; work in shortening. Add milk and mix. Roll out 1/4 inch
thick on floured surface and cut into 6 inch circles or the size you prefer.
Spoon about 1 heaping tablespoon of filling into center of pastry circle.
Moisten edges with water; fold over and seal edges, using tines of fork. Fry in
deep oil until golden brown. Remove and drain on paper towels. Dust powdered
sugar over each pie (optional).
Note: Thought this would work well with fried pies.
Have used this in the past often. Thought of Prepared Pantry's
dough press when I found this recipe again. Think I will use his
sour cream crust
recipe for this instead of the pastry dough listed.

Butterscotch Pudding Cake
1 pkg. Duncan Hines spice cake mix
1 (3 oz.) pkg. butterscotch pudding (not instant)
2 (12 oz.) pkgs. butterscotch morsels
2 c. pecans
Cook pudding as directed. Remove from stove. Add cake mix to pudding and mix
well with spoon. Pour into (lightly greased) 13 x 9-inch pan. Sprinkle morsels
on top and then pecans. Bake at 350 degrees for 35 to 45 minutes. Do not
overbake.

makes a mayonnaise with lime in it. I was wondering if anyone out there

Amaretto Ham
1 (5 pound) canned ham
1 teaspoon dry mustard
1 1/2 cups packed brown sugar
1/4 cup Amaretto
1 can apricot halves, drained (reserve juice)
1/2 cup apricot juice
Heat oven to 375 degrees. Drain jelly off ham and trim off excess fat.
Mix the dry mustard, brown sugar and Amaretto. Reserve 2 teaspoons for later.
Blend together to form thick glaze. Place ham onto bake rack in 2-inch deep drip
pan. Cut diamonds on top of ham. Pour mixture over top of ham. Bake in oven for
1 hour 20 minutes. Baste every 20 minutes with drippings. During last 20
minutes, place apricot halves on top of ham and sprinkle 2 teaspoons Amaretto
over top. Serves 4 to 6.

I have lost my very simple recipe for coconut custard pie. Do you think
any of the ladies could help me out??? The one I had only had three or four
ingredients in it....coconut, eggs, sugar and milk and maybe salt, can't
remember the measurements though and it was delicious, can't believe I lost it!

Shrimp Fried Rice
1 tbsp. vegetable oil
1 c. sliced fresh mushrooms
1/2 c. chopped green onions with tops
1 egg, beaten
2 c. cooked rice, chilled
1 1/2 c. cooked shrimp, cut in sm. pieces
1 tbsp. soy sauce
Heat oil in large skillet or wok over medium heat. Add mushrooms, onions, stir
fry 1 minute. Push vegetables aside, pour egg into skillet and scramble. Stir in
rice, gently separating grains. Add shrimp and soy sauce, stir until thoroughly
heated. Makes 4 servings.

For Diana/IL: I just sprinkle baking soda in my aluminum
sink like I would cleanser and use one of those scrubbers for Teflon pans
and rinse with cold water and your sink will be shiny like new!
Baking soda is great for cleaning your stove top too!

Blackberry Cake
3-1/2 c. flour
1 c. shortening
2 c. white sugar
1 c. sour milk
1 tsp. soda
1 c. blackberries, drained
1 tsp. cloves
1 tsp. cinnamon
1 tsp. allspice

1/2 tsp. salt
4 eggs, unbeaten
Cream shortening and sugar. Sift dry ingredients all but soda. Stir soda and
milk in. Add alternately dry ingredients, eggs and milk mixture. Lastly fold in
berries. Bake in 350 degree oven.

Try browning your burger and onions, add some flour to thicken and add milk for
gravy over biscuits or mashed potatoes. Our school is the Edon Bombers and the
school came up with bomber burgers. Brown ground beef and onions, then
melt cheese into it for a different sloppy jo. You can jazz it up with different
veggies and cheeses. Try Velveeta, mozzarella with different flavors. You can
always go the casserole route. Try tator tot casserole. A big favorite around
here is a crock pot recipe I use all the time. Start by spraying your crock pot.
Then layer as follows:
Slice 2-3 potatoes , skins on or off
salt and pepper, lightly
slice 2-3 carrots
salt and pepper
slice one medium onion
salt and pepper
1 can veggies (corn, peas, grean beans, or mixed) with juices
salt and pepper
brown ground beef
salt and pepper
1 can tomato soup (try one of the different flavored ones sometime) mixed with
one can of water. Pour over top and cook on low 8-10 hours or 4 to 6 on high.
Just before serving mix this all together. The recipe says this is a casserole
but it turns out to be a very thick soup or stew.

For Dott in Ohio, check out the Mrs. Dash website for no salt recipes. We
use them all the time, with my two favorites being the Table Blend, and Tomato
Basil. McCormick also makes a line of salt free seasonings that are really great
too! And Morton has a product called "Salt Substitute" which is totally sodium
free. We use all these products and haven't missed the salt at all...well, maybe
just a little, lol!

Hi, Mert here, ditto from Robert's wife in Ohio. I, too, made
the Spanish Bar Cake and a it was dry. I also remember the Bar as being darker
than this cake turned out. I was wondering if some molasses or sorghum was in
there. It hade a nice spicy taste, though. I though maybe next time I would try
oil instead of solid shortening. I do think something is missing though; maybe
some other type of liquid. Have others tried it? My mother also bought that cake
often. It really brought back back memories. Mert, WI..
Peach Cobbler
1 (16 oz.) can peaches
1 tsp. cinnamon
1/4 c. soft margarine
1 c. brown sugar
3/4 c. all-purpose flour
Place peaches, including syrup, in greased 8 x 8 inch baking
dish. Sprinkle cinnamon on top. Combine margarine, brown sugar and flour until
crumbly. Spread mixture over peaches. Bake at 400 degrees for 30 minutes.

Easy Cherry Cobbler
1 can peach pie filling
1 box sm. cake mix
1 stick butter
1 c. pecans (optional)
Pour pie filling into a 9 x 9 inch dish. Sprinkle dry cake mix over pie filling.
Slice stick of butter and layer over dry cake mix. Sprinkle pecans on top. Bake
at 350 degrees for 30 minutes or until brown.

Pennsylvania Dutch Peach Cobbler
1 stick margarine
1 c. sugar
1 c. flour
2 1/2 tsp. baking powder
3/4 c. milk
1 lg. can sliced cling peaches
Melt margarine in long baking dish. Sift dry ingredients together. Stir in milk
and pour over melted margarine (do not stir; it's better to spoon batter over
evenly). Lay peach slices on top. Pour peach juice over top. Bake at 350 degrees
for 40 minutes until brown. Makes 10 servings.

No-Bake Maple Peanut Butter Cookies
1-1/2 cups sugar
1/2 cup milk
1/4 cup maple flavored pancake syrup
1/2 cup creamy peanut butter
2 teaspoons vanilla extract
2 cups quick cooking rolled oats
In a heavy medium size saucepan, combine sugar, milk and syrup. Bring to a
rolling boil, stirring frequently. (important to bring to rolling boil or
cookies will not set up) Boil for 3 minutes. Stir in peanut butter and vanilla.
Stir in oats. Drop by rounded teaspoons onto waxed paper. Cool for 3 to 4 hours,
until firm.

Honey Pecan Snaps
"'These are delicious moist spice cookies,' explains Cheryl Christiansen of

1/2 cup butter or margarine, softened
1/2 cup shortening
1 1/2 cups sugar
1/2 cup honey
2 eggs
2 tablespoons lemon juice
4 cups all-purpose flour
2 1/2 teaspoons baking soda
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 cup chopped pecans
Additional sugar
In a mixing bowl, cream butter, shortening and sugar until fluffy. Add honey,
eggs and lemon juice; beat well. Combine dry ingredients; gradually add to
creamed mixture. Fold in pecans. Shape into 1-in. balls; roll in sugar. Place on
ungreased baking sheets. Bake at 350 degrees F for 12-13 minutes or until golden
brown. Cool 2 minutes; remove to wire racks.

Nancy I want thank everyone that sent in 1000 Island Salad
Dressings. I will try all the ones that were sent in but the one below is what
we used.
1000 Island Dressing
1 cup Miracle Whip
1 cup Chili sauce
1/3 cup pickle relish
1 egg, cooked and finely diced
1/2 teaspoon onion, finely diced
Mix all the above together and let sit in the refrigerator for 24 hours.
Make sure that the used by date on your Miracle Whip is not soon. I have lost my
Blue Cheese Salad Dressing from a jar of Miracle Whip that was to expire soon.
It turned out so runny and I have not used it.
In May I will be reading the newsletter but will not be able to type for at
least a month. I am having shoulder surgery because I am bone on bone. This time
I can not use my hand, arm or shoulder for at least a good 2 weeks. Then after
that we will see. Right now my poor husband has to take off 1 week but I have a
feeling that he might be home for 2. It is my left shoulder and I eat and write
with my left hand. I have in the past eaten with my right hand but it is not a
pretty sight. I guess that we will have a lot of crock pot meals the 2nd week if
he goes back to work. I can dump everything in to it with my right hand if
everything is ready for the pot. Then before the end of the year I will have the
right shoulder done. The reason the shoulders have to be done is that I carried
newspapers for 20? years and we had to lift 75 lb. bundles each day. About the
last year that I carried I told my DH that I could not do it much longer. You
don't get a vacation and even if you are sick you still have to deliver the
paper.

This soup is good and so easy to make. We like it with a meal, sandwiches or
with a salad.
Quick and Easy Ham Potato Soup
3 potatoes, peeled and cubed
1 small onion, chopped
1 cup water, I use chicken broth or chicken stock
1 cup ham or Canadian bacon, chopped
3 cups milk
1 cup instant mashed potato flakes
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1-1/2 teaspoons white pepper, I use freshly ground black pepper
Heat first three ingredients in a Dutch oven or soup pot until potatoes, are
tender, stirring occasionally. Stir in ham/Canadian bacon and milk, heating
through. Add potato flakes, a little at a time to desired thickness. Stir in
parsley, salt and pepper. Serves 6.

Chili Baked Fries
Serving size -1 cup
Weight Watcher points - 1 Points
4 large potatoes
2 teaspoons butter Buds (made into a liquid)
2 teaspoons chili powder
Cut potatoes into strips. Arrange on a baking sheet that has been sprayed with
nonstick spray. Dip each strip into liquid butter buds or brush with butter buds
mixture on potato. Sprinkle chili powder on top. Bake at 425 degrees for 15-20
minutes or until golden brown. Turn, bake another 15-20 minutes or until tender.
Makes 4 servings
Calories 73 calories, total fat 0g Fiber 3g, Carbohydrate 16g, Cholesterol 0mg,

4 (3 ounce) chicken breasts (skinless, boneless)
3 cups corn flakes (crushed)
1 teaspoon sage
2 tablespoons skim milk
Mix crushed corn flake crumbs, with sage. Dip chicken in milk and press into
crumbs, coating evenly. Place in baking dish sprayed with nonstick spray. Bake
uncovered at 375 degrees for 50-50 minutes.

I am searching for a recipe for a dish called Bourbon
Chicken. It is a wonderful chicken dish usually served with rice or noodles,

spaghetti. Then cook for 1 more hour.

Re: Baby Shower for Dad
We gave one of our co-workers a baby shower at work. We just had cake and blue
punch. We gave him a diaper shower they divided the alpha up and some bought
newborn, next group size 1, next group size 2, next group size 3 and then next
group size 4?
It was a lot of fun some people got him clothes to go with diapers, and stuffed
animals.

Hi all, For boots in Va. I make a pasta salad that my hubby loves
using the tri-colored pasta, green beans, garbanzo beans, and light red kidney
beans. Also has onions, olives, the artichoke hearts in oil ( the little jars)
and anything I have on hand that sounds good. Into all this (after the pasta is
cooked and cooled!) I put 2 bottles of Good Seasons Italian dressing. Let it
"soak" overnight to really get the flavors mixed in and YUMMY! Also use the oil
from the artichokes.

Re: requests concerning split pea soup: I am the type of cook who
learned to do things without exact measuring of ingredients most of the time.
With split pea soup, I usually used half a bag of split peas at a time. I put in
the peas, chopped onion, chopped celery, diced potatoes, a small amount of
grated carrots, can add ham bits, bacon, left over pork roast, ir desired, to
your soup pot. Add water to cover plus an inch or so more. The potatoes are to
help thicken the soup. Add salt, pepper, seasonings of your choice. Simmer about
an hour, add more water if it cooks down too much. Then the fun part, I use my
hand blender to mix the soup to a smooth consistency. I think Emeril calls it a
rotor rooter. It is a trial by error process, if you don't like something this
way, you can change the amount of the ingredients to taste.

Jane (gramaj) caught a mistake from a recipe that I sent in. This is
my Aunt's recipe. I have made it a lot, but it has been a while. I
have looked for my written copy, which I can not find. If my memory serves me
correct, it should call for two cans of the soup not one.

Quick And Easy Chicken Meal
4 chicken breasts, split, boned & skinned
Salt & pepper to taste
6 slices Swiss cheese
1 can cranberry sauce
1/4 lb. melted butter
2 cans cream of chicken soup
2 c. Pepperidge Farm stuffing mix
Place chicken in casserole dish and cover with cheese. Mix soup and cranberry
sauce until smooth (no water). Pour over chicken. Mix together melted butter,
soup and stuffing mix and sprinkle over top of mixture. Bake at 350 degrees for
about 45 minutes. Check several times so not to over cook.

Chocolate Milk Shake
3 big scoops of chocolate ice cream
1 1/2 c. milk
1/4 c. chocolate syrup
Mix in blender for 1 minute. Pour in tall glass.

Vanilla Milk Shake
3 scoops of vanilla ice cream
1/2 c. milk
1 tsp. vanilla extract
Place the ice cream in a blender with the milk and the vanilla extract. Blend
together until smooth. Pour into a glass and enjoy. Serves 1.

Indian Cornbread
1-1/4 c. yellow cornmeal
1/2 c. sifted all-purpose enriched flour
1 tbsp. granulated sugar
1 1/4 tsp. baking powder
1 tsp. salt
1/2 tsp. soda
1 egg, beaten
1 1/4 c. buttermilk
1/4 c. shortening, or margarine, melted
Combine cornmeal, flour, granulated sugar, baking powder, salt and soda and mix
thoroughly. Sifting dry ingredients together is the best way. Beat egg and blend
in buttermilk. Quickly stir dry ingredients and shortening into milk and egg
mixture, leaving a few lumps. Pour into a greased 8 inch square pan. (Batter
will be rather thin). Bake at 425 degrees 15 to 20 minutes or until nicely
browned. Cut into squares. Serves 6 to 8.
