Bisquick Lemon Pudding Cookies
1 pkg. (3 3/4 oz. size) lemon instant pudding
1 c. all purpose Bisquick mix
1/4 c. shortening
1 egg
3 tbsp. milk
Combine pudding mix and Bisquick in a medium bowl. Cut in shortening until
mixture resembles coarse meal (use pastry blender). Stir in egg and milk. Blend
well. Drop from teaspoon onto ungreased baking sheet. Bake at 375 degrees for 10
to 12 minutes or until lightly browned. Icing (optional): Mix 1 cup sifted
powdered sugar with approximately 1 tablespoon milk (usually more). Blend until
smooth. Spread over warm cookies.
Yield 1-1/2 to 2 dozen.
