Corn Cakes

Mix together in a bowl:
1 box corn muffin mix
1 egg
1 can undrained whole kernel corn
1 cup flour (i like 1/2 white and 1/2 wheat or buckwheat)

Heat butter in a sauté pan. Drop batter in to form individual pancakes and sauté on both sides.

Serve warm with butter and maple syrup.
(You can also add sliced hot dogs to the batter. Kids love it this way)
