Ruby Chicken
2 pounds Chicken pieces
1 medium Onions, chopped
2 tablespoons Oil
2 teaspoons Salt
1 teaspoon Pumpkin pie spice
1 can Orange juice, concentrated
2 teaspoons Orange peel, grated
1 pound Cranberries
1 cup Sugar
Night before: Chop onions, thaw orange juice and chicken, measure spices.
In the morning: Add ingredients to crockpot. Cook 8-10 hours, till done.
Serve over hot cooked rice.

The moderators on
our board
spend a lot of time there. Chris and all the others are so helpful in making
sure no inappropriate messages, all ad messages are removed and adding their
tried and tested recipes to the board. We are almost at the 30,000 mark for the
number of posts for recipes, tips and ideas. The message board is for everyone
to post if they wish. If you see a section not on the board and it relates to
cooking or food let me know so we can add it to the board. I just looked and
29,969 posts at 5:44PM Central Time Zone). Are there any out there that would
add their recipes and make it press right past 30,000? You do have to be a
registered member and have your email validated to post recipes. If you have AOL
the email sent to validate your email address never shows up anywhere in your
email. I would recommend those to get a yahoo or gmail address to get the
validation email.
I have noticed that most recipe emails are not blocked using Gmail. Not
one of my newsletters has been blocked on my gmail address.

Hi Nancy,
I have a question regarding the Sausage And Rice Casserole
submitted today (7/15/08) by Barb/De.
In the instructions it doesn't mention anything about the rice. When do you add
it and is it to be cook or put in uncooked? Would like it make, but unsure about
this. Please clarify. Thanks.

I fix this all the time. I mix the uncooked rice in the soups and them add
the rest of the ingredients in the casserole dish.

Green Peas with Tomatoes
2 Tbsp. butter
1/4 cup finely sliced onion
1 garlic clove, sliced
2 Tbsp. tomato paste
1 tomato, diced
1 1/3 cup green peas
salt & pepper
1 Tbsp. fresh basil, chopped
In a skillet, melt butter. Add garlic and onion and saute over low heat.
Add tomato paste and tomatoes; stir; add green peas. Cook for 10 minutes over
medium heat. Season with salt & pepper, add basil and serve.

I went surfing today for a few minutes on
our recipe message
board. Found some recipes that I want to try. Went to the section
Cooking for 2 and found
Hamburger Soup for 2
1/2 pound ground beef
3 cups water
1 cup tomato juice
1/4 cup shredded carrots
1 cup diced potatoes
1/4 cup chopped celery
2 tablespoons uncooked rice
1 medium onion, chopped
1 teaspoon salt
Brown beef in skillet, chopping into bite size pieces as it browns. Drain and
add to 3 cups boiling water in sauce pan. Add remaining ingredients and simmer
for approximately 30 minutes or until the vegetables are tender.

Baked Beans For Two
1 can (16 ounces) pork and beans
3 tablespoons ketchup
2 tablespoons chopped onion
2 to 3 teaspoons brown sugar
2 to 3 teaspoons honey
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
1/8 teaspoon prepared horseradish
Combine all ingredients in an ungreased 1-qt. baking dish. Bake, uncovered, at
350 degrees for 30-40 minutes. Yield: 2 servings.

Other recipes that looked like ones that may be keepers in the
Recipe for Two were: Chicken Grape Salad, Fruit Pizza, Ham and
Cauliflower Casserole, Orange Julius, Strawberry Julius and Raisin Bread.
I was searching through the
CopyCat Recipe section to find the Clone Recipe for the Hash Brown
Potato Casserole and the Fried Apples recipes. Of course stopping there didn't
work for me. Being a collector of recipes I had to check out the
BBQ
recipes too. Had hoped our member with the meatloaf recipe problem
would post her story under the Kitchen Humor section. It is my favorite story as
well.

A friend of mine came over and gave me some of her recipes I had wanted. Here
are two of them she brought over.

Grandma's Ice Cream (Doesn't need an ice cream freezer)
3 cups whipping cream
3 cups milk
3 cups granulated sugar
Juice of 3 lemons
Juice of 3 oranges
3 bananas, mashed
Combine cream, milk and sugar. Stir until dissolved. Place in oblong or square
freezer container. Freeze about 1/4 hour or until mushy; then add juices and
bananas. Mix well. Freeze until firm.
Serves 12.

Pea Salad
1 can French Style green beans, drained
1 can Lima beans, drained
1 can English peas, drained
1 sweet pepper, chopped
1 c. purple onion, chopped
1 c. celery, chopped
4 ounces pimento, drained
Mix. Boil and pour over mixture:
1 c. vinegar
1 c. sugar
1/4 c. Wesson oil
Store in refrigerator. Chill before eating.

Today I found the ham flavored concentrate by Goya, it is in a
yellow (beige) box and there are 8 packets inside. Each packet says it provides
the flavor of 1/4 pound of smoked country ham. Since we go to Winn-Dixie first
and I found it there I bought it there for $1.59. They also have it at Wal-Mart
(same package) for $1.27 so will get it there next time but it should last a
long time. I plan to try it soon in green beans. Both stores had other flavors
in the same type package. One side is in Spanish and says Sabor A JAM? De
Concinar and shows a pig. Other side is in English and says Ham Flavored
Concentrate with the same pig.
Was happy to find it and hope others that want it can find it as well.

In the July 12th issue, Marylee from Indiana requested a source for Clear-jel.
Clear-gel is not the same as Sure-jel which is used for making jams and jellies.
Clear-gel comes in two types. One is for cooking /thickening and the other is
for cold/uncooked recipes.
If you go on line to
nichols@gardennursery.com, or call 1-800-422-3985 to order whatever amount
that you need.
I recommend this product, which is a modified cornstarch. When used in cooking,
you can reheat the food product and the thickened juices will not break down, as
will cornstarch or flour. I have very successfully used this product to make
canned pie fillings. Hope this helps.

GREEN TOMATO CAKE
3 c. flour
2 c. sugar
2 tsp. soda
1 tsp. cinnamon
1 1/2 c. oil
3 eggs
3 c. chopped green tomatoes
2 tsp. vanilla
FROSTING:
1/2 stick butter
1 (8 oz.) cream cheese
1 tsp. vanilla
Powdered sugar
Mix all ingredients together. Bake in a large pan at 350 degrees until toothpick
comes out clean. Frost with cream cheese frosting.
Mix butter, cream cheese and vanilla. Add powdered sugar until stiff enough to
spread.

Cherry Tomatoes Provencale
3 Tbsp. bread crumbs
2 tsp. chopped parsley
1 garlic clove, sliced
salt & pepper
2 tsp. vegetable oil
8 cherry tomatoes, halved
2 tsp. Parmesan cheese, grated
Preheat oven to 400 degrees.
In a bowl, combine breadcrumbs, parsley, garlic, salt and pepper. Lightly coat
each tomato half with oil, then cover with breadcrumb mixture. Sprinkle with
Parmesan and bake for 5 - 10 minutes.
