Spanish Rice

3 Tbs. cooking oil
1 clove garlic, minced
1 cup onion, chopped
1 cup rice
2 cups hot water
2 chicken bouillon cubes
1/4 to 1/2 cup tomato sauce
1 cup chicken, cooked
1 cup corn, canned
1 tomato, chopped

Heat oil with garlic and onion. Add rice, cook in oil until it turns white, stirring constantly. Add water, bouillon cubes and tomato sauce. Bring to boil. Reduce heat to simmer, add chicken and corn. Cook until most liquid is absorbed. Add tomato and heat through.
Serves 4
