Cheesecakes Cracking on Top #1

To the person in the May 26th. newsletter who
had trouble with cheesecakes cracking on top.

I have a cheesecake recipe that says to put the filled
springform pan into a larger pan that has a small towel
in the bottom of it, fill the larger pan with hot water
until the water reaches 1/2 to 2/3 up the sides of the
cheesecake pan and then bake for 1 hour at 350? or
until lightly browned. Turn off oven, crack oven door
open and leave another 45 - 60 min. Cool and refrigerate.
