Duchess Hot Dogs
Simmer eight hot dogs in boiling water.
Remove from water, cool a minute, and then
split lengthwise. Lay in a baking pan, split
side up.
Saut?1/2 cup finely chopped onion
in 4 Tb butter, set aside.
Beat two eggs until well blended
Peel, cube and cook until tender six to eight
medium potatoes. Enough to make about 4 cups
of mashed potatoes. When done, drain, and mash,
using warm milk; (using cold milk does something
to the starch in potatoes, and often makes them
sticky) Beat in the eggs and the onion/butter mixture.
Spoon the potato mixture evenly into the split hot
dogs, sprinkle with a little grated cheese of your
choice, and put in to a 350 oven for about 20
minutes, or until piping hot and the cheese is
melted.
