Pineapple Bars
Preheat Oven to 350 degrees
FILLING:
In a small saucepan combine:
1/2 c granulated sugar
1 - 20 oz can crushed pineapple with juice
2 T corn starch
Stirring constantly, bring to boil until thickened.
Remove from heat and cool.
TOPPING & BOTTOM CRUST
Combine:
3 c Quick Oatmeal (not instant!)
1 c brown sugar, firmly packed
1 c flour
1 c liquid vegetable oil
Mix with spoon or hands until mixture holds
together when pressed. Press 1/2 of topping
on bottom of oblong pan (9 x 13) or 2 - (8? sq.)
pans. Spread cooled pineapple evenly on top.
Sprinkle rest of topping over all, covering completely.
Pat down even with hands or wooden spoon. Bake
until lightly brown -- approx. 40-45 minutes at 350
degrees
