Fresh Rhubarb Crumb Cake
Cream together:
1/2c shortening
1 1/2 c sugar
1 egg
Add:
(alternate milk and flour)
2 c minus 2 tbsp flour
1 c sour milk or buttermilk
1 tsp baking soda
Mix about 2 minutes. Do not over mix.
Stir in 2 c fine chopped rhubarb
Topping:
1/3 c sugar
1 tsp cinnamon
Pour batter into a greased and floured 9x13
baking dish. Sprinkle with topping. Bake at 350?
for 35-45 minutes. Cool and serve from pan.
