Rhubarb Pecan Muffins

Combine:
3 cps. Flour
1-1/2 cps. Brown Sugar
1 tea. each of Soda and Salt

Combine:
2/3 cps. Oil
2 Eggs, lightly beaten
1 cup. Buttermilk or Sour Milk
1 tea. Vanilla

Stir wet ingredients into dry ingredients
till moist.

Add:
2 cps. diced Rhubarb and 1 cup. chopped Pecans

Topping:
1/2 cup. each of Brown Sugar and Nuts and 1/2 tea.
Cinnamon.

Grease Muffin Pans or use Paper Liners. (I spray).
Bake: 350? for 18 to 20 minutes. Makes 24 Muffins
and for Mini Muffins, bake for 13-15 minutes. Check
at lower number of minutes!

Can't wait for the Rhubarb to come. These are truly delicious.
