Steak Sandwiches

butter
olive oil
1 medium onion, sliced
1 pint large mushrooms
Cajun Seasoning (I used Tony Chacherie)
1 green bell pepper, julienned
2 sirloin strip steaks, sliced thinly across the grain

pickled hot jalapeno pepper rings, to taste
(I used about 1 palm)

Salt and pepper to taste.
Hot Pepper Sauce, to taste
(I used Texas Pete - about 2-tspns

sliced mild cheddar - 2

1 pistolettes, sliced down the middle and warmed
in oven wrapped in foil

Heinz 57

Melt 1-tbspn of butter in a deep fry pan and
add some olive oil to keep the butter from burning.
Throw in the sliced onions and mushrooms. As this
mixture begins to cook down add another tbspn of
butter and some more olive oil as needed. When
the onions and mushrooms have cooked for about
5 minutes, add the Cajun Seasoning and the bell
pepper strips and cook for about another 5 minutes
or so -- or until the veggies are done to your taste.
While this is cooking add 1-tbspn butter and olive
oil to a separate smaller skillet and cook the steak
down with the pickled jalapeno peppers, salting and
peppering to taste. This will take about 7 minutes.
While all the ingredients are cooking unwrap each
pistolette and add a slice of mild cheddar cheese.
Re-warp in the foil and return to the oven -- but
turn the oven off this time. After about 3-4 minutes,
serve up the ingredients onto the pistolettes with
cheese, drizzle with Heinz 57 and serve hot.
Make two BIG sammies. So-o good.
