I made up this salad one day trying to use up things in the refrigerator - now it's a staple here -- we do like salads!

Rosemarie's Sunshine Carrot Salad

2 C shredded carrots
1/3 C mayonnaise - I use non-fat
1/3 C sour cream - I use non-fat
2-3 T orange juice concentrate (not diluted)
1-2 T brown sugar (to taste)
1/3 C sultanas (golden raisins)
3 T chopped chives

Mix well to blend and refrigerate several hours
Sprinkle chopped candied walnuts or pecans over the top before serving if desired -- they add a lot to the salad!
