First Down Frittata
for Dorothy WA/AZ (8/22)

3 T. oil
2 c. frozen shredded hash brown potatoes
1/2 green pepper, chopped
6 eggs, beaten
2 T. milk or water

10 slices bacon or turkey bacon, cut into 1 in. pieces, cooked & drained 1/8 c. Shredded Sharp Cheddar Cheese Heat oil in large non-stick skillet. Add potatoes & green pepper; cook 5 min. or until potatoes are browned, stirring occasionally. Mix eggs & milk in small bowl. Pour egg mixture evenly over potatoes and green pepper. Sprinkle w/ bacon. Cover. Reduce heat to low,. Cook 8-11 min. or until eggs are set. Sprinkle w/ cheese. Cover. Heat until cheese melts. Cut into wedges.
Makes 6 servings.

(You could experiment substituting sausage for the bacon.)
