Spiced Zucchini Bread
3 c. flour
2 t. baking soda
1 t. salt
1/2 t. baking powder
1 1/2 t. cinnamon
3/4 c. chopped nuts
Combine these ingredients and set aside.
3 eggs
2 c. sugar
1 c. vegetable oil
2 t. vanilla
2 c. coarsely shredded zucchini
1-8 oz. can crushed pineapple-well drained
Beat eggs lightly; add sugar, oil and vanilla; beat until
creamy. Stir in zucchini and pineapple. Add dry ingredients,
stirring until dry ingredients are moistened. Spoon batter
into 2 greased and floured 9 x 5 x 3 in. loaf pans. bake at
350 degrees for 1 hour. Cool 10 min. in pan, remove to a
rack and cool completely.
