To Chris: I already am familiar with the recipes Nancy has
included. I was hoping for some other tried and true mini
recipes for various mini cookware. I should also mention
that I also have a mini loaf pan and a mini bundt pan.
More Beans:
Tangy Black Bean Salsa
1 can (15 oz) black beans, rinsed & drained
1 large tomato, seeded and chopped
1 med. cucumber, seeded and chopped
1 med. red onion, chopped
1 small sweet yellow pepper, chopped
6 radishes , chopped
1 jalapeno pepper, seeded and chopped
2 T. minced fresh parsley
3 T. red wine vinegar
3 T. olive oil
1/2 t. salt
1/2 t. garlic powder
1/2 t. ground cumin
1/4 t. pepper
Baked tortilla chip scoops
In large bowl, combine beans, tomato, cucumber, onion,
pepper, radishes, jalapeno & parsley. In small bowl, whisk
vinegar, oil & seasonings. Pour over bean mixture & toss to
coat. Cover & refrigerate at least 1 hr. Serve w/ chips. 1/3
c. w/o chips = 63 calories
