In the July 21st newsletter Lois in Ky. was asking for a
good chocolate chip cookie recipe, and I have two that are
favorites at our house, so will copy both for her, and hope
she will enjoy them as much as we do. Both of these cookies
are excellent for shipping. I send them to my granddaughter
at college, and they arrive in perfect shape.
Almost Home Chocolate Chip Cookies
2 cups brown sugar (not packed)
1/2 cup butter
1/2 cup shortening
2 eggs
2 tsp. vanilla
3 cups flour
2 tsp. cream of tartar
2 tsp. baking soda
1/2 tsp. salt
1 pkg. (12 oz.) chocolate chips
In bowl for an electric mixer, cream brown sugar, butter and
shortening together well, using medium speed. Add eggs and
vanilla and beat in well. Add dry ingredients and blend just
until mixed, on low speed. Stir in chocolate chips. Roll in
balls, or drop by heaping teaspoonful onto ungreased cookie
sheets. Bake at 350ΒΊ for about 12 minutes, until golden
brown. Remove to wire racks after about 2 minutes. Makes a
large batch, but they never seem to last too long!
