Creole Meat Loaf
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped bell pepper
2 tablespoons butter
1 1/2 cups ketchup
1 1/2 pound ground beef
1 cup soft bread crumbs
1 egg, slightly beaten
1/2 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 350 degrees.
Stir and cook onion, celery and bell pepper in butter until
tender. Stir in ketchup. Combine 1/2 cup plus 3 tablespoons
of mixture with ground beef, breadcrumbs, salt and pepper;
mix well. Form into a loaf; put onto shallow 8 x 4 inch
baking pan. Bake for 1 hour. Simmer remaining sauce in a
small pan
over low heat for 15 minutes. After meatloaf has cooked,
remove from oven and let rest for a few minutes before
slicing. Serve sliced meat loaf with sauce.
