Crockpot Marinated Chicken
1 (2.5 to 3 lb.) chicken (cut into pieces)
3/4 cup soy sauce
1/4 cup unsweetened pineapple juice
1 Tbs. dried onion flakes
1/2 tsp. dry mustard
1 clove garlic, minced
Wash chicken pieces and pat dry with paper towels. Place
chicken in a plastic zip-lock bag. Combine soy sauce,
pineapple juice, onion flakes, mustard and garlic in a small
bowl; whisk to blend and pour over chicken in bag. Close bag
and marinate under refrigeration for at least 4 hours or
over night. Remove marinated chicken from bag and place in
slow cooker. (Discard marinade.) Cover and cook on ?Low? for
4 to 5 hours. Serves 6.
Recipe Note: Marinated chicken may also be baked in a
conventional oven: Remove chicken pieces from marinade,
place in a baking dish, tightly cover with foil and bake in
a 350? oven for approximately 1 hour.
