Today (Sunday) our church had a cookout after church and we all pitched in dishes to accompany the hamburgers and hot dogs. I brought the dish and boy was it a hit!

I am enclosing a dish one of the ladies brought and it was wonderful!

Georgia Cornbread Salad

1 box of Jiffy cornbread mix. Make as the box directs.
When done, cool and crumble some on the bottom of a bowl. Add a layer of chopped onions, layer of chopped green pepper, layer of chopped tomatoes, repeat layers again,. starting with the crumbled cornbread. Spread mayonnaise over top and sprinkle on real bacon bits. She had crisp cooked bacon and crumbled it. Let sit all day in fridge or overnight. I thought it would be pretty to add grated cheese on top of the bacon.

It is sooooo good! I didn't remember she had told us she was bringing it and I took some and wondered what kind of salad it was. She asked me how I liked the cornbread salad. I told her I didn't see it, she showed me....that was it! She had made a large bowl so used 2 boxes of Jiffy cornbread mix. I told her I was going to share the recipe with all of you. She laughed and was so pleased.
