Herbed Cherry Tomatoes
1 pt cherry tomatoes, halved
1/4 cup vegetable oil
3 tbsp vinegar
1/4 cup minced fresh parsley
1-1/2 tsp minced fresh basil or 1/2 tsp dried
1-1/2 tsp minced fresh oregano or 1/2 tsp dried
1/2 tsp salt
1/2 tsp sugar
Leaf lettuce (optional)
Place tomatoes in a mixing bowl; set aside. In as small
bowl, combine oil and vinegar. Add herbs, salt and sugar.
Mix well. Pour over the tomatoes. Cover and refrigerate for
at least 3 hours. Drain; serve on lettuce leaves, if
desired.
Serves 4-6.
