To Pauline in July 15 Newsletter = My recipe for "Pretzel
Salad" a bit different from Jan's (July 16) in that you can
use frozen strawberries as well as a few other minor
changes.

Pretzel Salad
2 cups pretzels, crushed
3/4 cup butter or margarine, melted
1 tablespoon sugar
8 ounces cream cheese
1 cup sugar
2 cups frozen non-dairy topping
2 small boxes, 3 oz. each, strawberry Jell-O
2 cups boiling water
2- 10 oz. packages frozen strawberries (not thawed!)
Mix the pretzels, butter and 1 t. sugar together and press into the bottom of a
9”x 12” baking dish or pan and bake in preheated 400 oven for 8 minutes.
Cool.
Mix the cream cheese, 1 cup sugar and topping together and spread on cooled
crust.
Dissolve the Jell-O in the boiling water and add the strawberries.
Pour the mixture over the cheese layer and chill until firm.

Karen from Wisconsin posted a dish called 4th of July
Bean Casserole on June 30th.
Today (Sunday) our church had a cookout after church and we
all pitched in dishes to accompany the hamburgers and hot
dogs. I brought the dish and boy was it a hit!
I am enclosing a dish one of the ladies brought and it was
wonderful!

Cornbread Salad
1 box of Jiffy cornbread mix. Make as the box directs.
When done, cool and crumble some on the bottom of a bowl.
Add a layer of chopped onions, layer of chopped green
pepper, layer of chopped tomatoes, repeat layers
again,.starting with the crumbled cornbread. Spread
mayonnaise over top and sprinkle on real bacon bits. She had
crisp cooked bacon and crumbled it. Let sit all day in
fridge or overnight. I thought it would be pretty to add
grated cheese on top of the bacon.
It is sooooo good! I didn't remember she had told us she was
bringing it and I took some and wondered what kind of salad
it was. She asked me how I liked the cornbread salad. I told
her I didn't see it, she showed me....that was it! She had
made a large bowl so used 2 boxes of Jiffy cornbread mix. I
told her I was going to share the recipe with all of you.
She laughed and was so pleased.

Especially for Gloria in Indiana who is
wanting a good shredded barbecue recipe for sandwiches. I
highly recommend this one. It will yield enough meat for 12
sandwich buns. It freezes beautifully, and it can be thawed
for party time, kept warm in crockpot for serving. Enjoy!
Barbequed Beef
3 pounds boneless chuck roast
1 1/2 cups ketchup
2 Tablespoons Dijon-style mustard
1/4 cup packed brown sugar
1/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
1 tsp. liquid smoke flavoring
1/2 tsp. seasoning salt
1/4 tsp. black pepper
1/4 tsp. garlic powder
Place chuck roast in crockpot. Combine remaining ingredients
in mising bowl. Pour BBQ sauce mixture over chuck roast.
Cover and cook on LOW 8-10 hrs. (prefer 10 hrs.). Remove
chuck roast from crock pot and shred meat by using 2 forks
to pull apart. Place shredded meat back in crockpot. Stir
meat to evenly coat with sauce. Cover and continue cooking
on LOW for 30-45 minutes. Spoon meat onto sandwich buns.
Serves 12.

Newsletter) Banana Cream Pie is my youngest sons all time

Banana Cream Pie
1 baked 9" pie shell
3 large bananas
Mix together in saucepan:
2/3 cup sugar
3 Tbs. cornstarch
1/2 tsp. salt
Gradually stir in:
3 cups milk and cook over medium heat, stirring constantly,
until mixture thickens and boils. Boil 1 min. Remove from
heat and gradually stir at least half of the hot mixture
into 3 slightly beaten egg yolks (I use the whole egg). Then
blend the hot mixture back in saucepan. Boil 1 minute more,
stirring constantly. Remove from heat and stir in 1 Tbs.
butter and 1 1/2 tsp. vanilla. Cool filling.
Slice the bananas into the pie shell and pour filling over
them. Chill. I serve this with sweetened whipped cream.

Here are two barbecued beef sandwich recipes for your
consideration.
Barbecued
Beef Sandwiches (Pillsbury)
3-1/2-4 lbs beef round steak, trimmed of fat and cut into 1"
pieces
1 cup finely chopped onion
1/2 cup firmly packed brown sugar
1 tbsp chili powder
1/2 cup ketchup
1/3 cup cider vinegar
12 oz can or bottle of beer
6 oz can tomato paste
20 hamburger buns, split
In a 3-1/2-4 qt slow cooker, combine all ingredients except
buns; mix well. Cover; cook on LOW 10-12 hours. With slotted
spoon, remove meat from sauce. Place meat in a large bowl.
With two forks, shred beef. Add 2 cups of sauce from slow
cooker; mix well. Spoon mixture into buns. If desired, serve
with extra sauce.
Tangy
Barbecued Beef Sandwiches
3 cups chopped celery
1 cup chopped onion
1 cup ketchup
1 cup barbecue sauce
1 cup water
2 tbsp vinegar
2 tbsp Worcestershire sauce
2 tbsp brown sugar
1 tsp chili powder
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 boneless chuck roast, 3-4 lbs
14-16 hamburger buns
In a slow cooker, combine the first 12 ingredients; mix
well. Add roast. Cover and cook on HIGH 6-7 hours or until
meat is tender. Remove roast from slow cooker; cool. Shred
meat and return to sauce; heat through. Use a slotted spoon
to serve on buns.

Good morning Nancy,
Sounds like you had a good Friday (except of course Ditto's
dreaded jabs). We are having a lot of rumblings of thunder
and lots of rain AGAIN! Charly has used her litter tray last
night, for the first time this year. .She looked out the
porch door, I opened it, she put her two front paws
tentatively over the threshold - decided she wasn't in the
mood for the dash to wherever and back pedalled inside.
She's nobody's fool. I decided not to go out too, made our
meal from something in the freezer.
I've discovered that Beefaroni is a specialty of American
cuisine. Sue in NC sent me the recipe ages ago, but I never
got around to trying it. I came across a similar version in
E-Cookbooks, so decided as I had mince (ground beef) in the
freezer, I'd give it a try. Did it in the slo-cooker. Sent
an email to my Scottish friend who lives in Texas and told
her I was trying Beefaroni and had she heard of it. Well she
threatened me with not bringing me my Bread and Butter
pickles in September, if I messed about with the Beefaroni
recipe. Also was told "don't forget the cheese on top". On
her yearly visits she has never, ever mentioned this dish.
She says it's a bit like Scottish Stovies, a filling,
delicious, one pot dish. The DH loved it and gave it 9 out
of 10. I'm not putting my version of the recipe down in
writing here, just in case Dot reads it and doesn't like it
and doesn't bring my pickles.
Has anyone heard from Billie in Fl., I do miss her and her
recipes.

I recently made the yellow
cake with pineapple and have to say it is to
die for. My husband and friends really loved it, however I
couldn't find the pineapple pudding mix and I looked in
three stores, so I used the cheesecake instant pudding and
it was wonderful. I would think you could use any kind of
instant pudding.

Hi Chris, This is the Spanish Rice I've made for years,
my Grandma's, then my Mom's recipe, now mine...
Eve's Spanish Rice
Serves 4 to 6
Inexpensive, delicious, and very easy to make.
1 lb. ground beef
1/2 C. uncooked regular rice
2 or 3 large onions - sliced
2 tsp. salt
1 large green pepper - chopped
1 to 2 tsp. chili powder
1 (16 oz..) can diced tomatoes
red pepper flakes to taste
salt & pepper to taste
garlic salt to taste
Heat oven to 350 degrees F. In large skillet, cook and stir
meat, onion and green pepper until meat is brown and
vegetables are tender. Drain off fat. Stir in tomatoes,
rice, salt, chili powder and pepper; heat Adjust seasonings.
Pour into ungreased 2-quart casserole. Cover; bake 1 hour.

Barley Burger Stew
2 Servings
"I found this hearty stew recipe in an old cookbook
purchased at a flea market," recalls Judy McCarthy of Derby,
Kansas. "The blend of beef and barley really hits the spot
on cool days."
1/2 pound ground beef
1 small onion, chopped
1/4 cup chopped celery
2-1/4 cups tomato juice or V-8 reg or spicy
1/2 cup water
1/4 cup medium pearl barley
1 to 1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
In a large saucepan over medium heat, cook beef, onion and
celery until meat is no longer pink; drain. Stir in the
tomato juice, water, barley, chili powder, salt and pepper.
Bring to a boil. Reduce heat; cover and simmer for 50-60
minutes or until barley is tender.

Easy Chicken and Dumplings
Serves 2
Short on time? Serve up a delicious comfort food favorite
for two in just 15 minutes.
1 can (19 oz) Progresso® chicken vegetable soup
2 Pillsbury® Grands!® frozen buttermilk biscuits (from 25-oz
bag)
In medium saucepan, heat soup just to boiling over
medium-high heat. Meanwhile, place frozen biscuits on
microwaveable plate. Microwave on High 15 to 30 seconds or
just until biscuits begin to thaw. Cut each biscuit into 6
pieces.
Place biscuit pieces on top of simmering soup. Reduce heat
to low; cover and simmer 6 to 7 minutes or until dumplings
are fluffy and no longer doughy in center.

Spicy Beef Chow
Mein
SERVES 2 , 2 full meals
spicy, flavorful, 1 bowl meal, low fat
2 (3 ounce) packages beef-flavor ramen noodles
1 1/2 lbs beef (any lean cut)
4 scallion (if your garlic or onion grew a green top in
storage use this)
1 cup slivered onion
5 garlic clove, minced
6 tablespoons fresh parsley, coarsely chopped incl. minced
stems
1 cup chopped celery
2 tablespoons sesame seed
1 teaspoon red pepper flakes
1 1/2 teaspoons ground ginger or 1 tablespoon minced fresh
ginger
1-2 tablespoon honey or sugar
1-2 tablespoon sesame oil (optional) or vegetable oil
(optional)
2 teaspoons rice vinegar (optional) or white vinegar
(optional)
2 teaspoons lime juice or 2 lime wedge
Cut beef into 1/2 inch pieces. Mince garlic and parsley
stems (and ginger if fresh), coarsely chop parsley leaves,
chop celery, scallions and finely slice onion (1
medium/small). Drop ramen noodles into boiling water, remove
from heat, allow to cool a few minutes then drain. Noodles
will not be fully cooked yet. Heat frying pan or wok to med
high, add 1/2 cup water, seasoning pkts, and onion. Cook a
couple minutes. Add beef pieces, toss so each side is
browned, add all other vegetables/flavorings. Add ramen
noodles, toss, heat thru couple minutes. Serve in two bowls
and top with lime juice.

This is for ED who is looking for lemon pie cooked in a
double boiler. It DOES have corn starch in it, so may not be
what you have in mind but it is GOOD! This is the one I use
and LOVE it.
Favorite Lemon
Meringue Pie
Graham Cracker Crust - (9 inches if you can find it, I have
to use Keebler's
10" ones as I can't find the 9 inch ones).
1 cup boiling water
1/8 tsp salt
1 cup sugar
3 tablespoons cornstarch
1/4 cup lemon juice(Realemon can be used)
3 egg yolks -- slightly beaten
1 tablespoon or more unsalted butter
Mix sugar, cornstarch, and boiling water. Add egg yolks,
lemon juice, butter, and salt. Cook in double boiler until
thickened. Cool, pour into baked pie shell. Top with
meringue, whipped topping, or whipped cream. If meringue is
used, return to oven to brown the meringue.
MY NOTES : I first made this May 19, 2007. It was absolutely
delicious! It DID take a LONG time in my double boiler (30
minutes) to gel enough to hold as a pie, but that worked. I
think I have FOUND my Lemon pie - but I will continue to
experiment on trying to not have to cook it so long.

I made a great SW dish last night. It is a keeper!
Beef Taco Skillet,
my way
Adapted from a Campbell's Kitchen recipe
Serves: 3 - 4
1 pound ground beef
1 can (10 3/4 ounces) tomato sauce
1 sm. 6 oz. chopped Hatch green chiles
1 small onion, diced
1/2 cup salsa – I used my old stand-by, Chi Chi’s mild salsa
1/2 cup water
3 corn tortillas, cut into 1-inch pieces
1/2 to 3/4 cup shredded Mexican blend cheese
Cook the beef in a 10-inch skillet over medium-high heat
until it's well browned, stirring often to separate meat.
Add diced onions to beef and sauté’ till soft. Pour off any
fat.
Stir the sauce, salsa, water, green chiles and tortillas in
the skillet and heat to a boil. Reduce the heat to low. Cook
for 5 minutes. Stir the beef mixture. Top with the cheese.
Creamy Mexican Fiesta: Stir in 1/2 cup sour cream with the
soup.
Ranchero Style: Use corn tortillas instead of flour
tortillas and shredded Mexican cheese blend instead of
Cheddar. I used our Presto square 10” electric skillet.

and have never heard of Smearcase cake nor the Velma Bakery.
I do remember Muhly’s (sp)
Bakery and their peach cake, made with yeast
dough. I have never found peach cake like it anywhere. I was
in Baltimore this past week and was able to find peach cake
at Simon’s Bakery in Cockeysville. Brought it back home with
me, along with Utz potato chips & Tastykakes. If I had the
cooler space, I would have gotten Esskay Hotdogs. LOL

Shoepeg Corn Salad
2 cans shoe peg corn, drained
1 green pepper, chopped fine
1 bunch green onions, chopped fine
1 jar pimento, drained and chopped
1/2 c. ripe olives, sliced
1 c. grated Cheddar cheese
Toss together with 8 oz. low calorie or regular Italian
dressing. Serves 12 to 14.

Pecan
Crusted Chicken
4 skinless, boneless chicken breasts
2 eggs
1/4 cup milk
1/2 cup all-purpose flour
1 tablespoon poultry seasoning
1-1/2 tablespoons ground cinnamon
1 cup chopped pecans
1 pinch white sugar
salt to taste
ground black pepper to taste
2 tablespoons light olive oil
In a small bowl, mix the eggs with the milk. Set aside. In a
medium bowl, mix together flour, seasoning, cinnamon,
pecans, sugar, and salt and pepper. Dip the chicken in the
egg mix, and roll in the pecan mix. Fry in hot olive oil
until golden, about 6 minutes or so. Check to make sure
pecans don't burn. Place on paper towel to drain.
Makes 4 servings.

To Lindsay whose cat
peed while she was gone away for a few days. When you say
she has no bladder infection, does that mean you've taken
her to the vet and they've tested her urine? I've had many
cats as I have done rescue for 25 years and if they are
doing something they never did before, they normally have a
health issue and need a full check-up or something stressful
has made them change. As a matter of fact I have on
antibiotics now for a bladder infection. It is only logical
that a cat that has not done it for most of the their life
who begins doing it needs to be checked out thoroughly
before making her pay with her life.

Lindsay in the UP RE: Cat urinates where she shouldn't
Please please don't put Kitty down for this. I am glad you
had her checked for Kidney infection and bought a bigger
litter box-but there are many causes of inappropriate
toileting. Have you changed your litter brand or has the
litter company changed something like texture or smell (or
odor blocking agents). What do you wash litter box in-do you
use bleach or pine-sol type cleaners that could leave a
smell. Where Is litter box located? Did something scare
kitty in the box? Any major household changes-people in or
out, remodeling, painting or carpeting ? Maybe some change
in food (types or brands) or meds( if she takes any). I
would re-check the kidneys though-as this is the most common
problem-especially w/ males. The pain becomes associated
with the box and they go elsewhere. You might consider a
cage for Kitty and it should be big enough to accommodate a
litter box. Or confine to say a bathroom or other space that
you can easily clean until problem solved. Some require the
box to be pristine and some couldn't care less. just try
everything and try to find the problem. Trust me kitty would
prefer to use the box and there is a reason she won't- it's
our job to figure it out. Good luck and let us know what
happens- there's lots of animal lovers here.

Is it okay to advise Susie in Indy to please tell her DHs
doctor about his confusion on e-mail and phone systems? My
brother had triple by-pass and for a short time believed
that what was good for him, wasn't good for him and vice
versa. He is fine now. I am not sure whether it has to do
with amounts of oxygen and the brain during surgery or what.
But she should let his doctor know.
How many times may I tell you how I love this newsletter and
