Nancy here is a very good Zucchini bar recipe that my Late Mother would make
every summer as we were blessed with lots of zucchini..It is a sure t&t recipes
as I made two pans this week..sent some home with my daughters and some went to
the ball field for the workers
Zucchini Bars
2 cups white sugar
1 cup cooking oil
2 and 1/2 cups flour
1 teaspoon salt
2 cups shredded zucchini
1/2 cup nuts
3 eggs
3 teaspoon vanilla
2 teaspoon baking soda
1/2 teaspoon baking powder
Beat everything together. Pour into a jelly roll pan and bake at 350? for
approximately 45 minutes. Be careful not to overbake. Cool and ice.
Icing
3/4 package of Philadelphia cream cheese
1 teaspoon vanilla
2 and 1/2 cup powdered sugar
Enough milk to spread sprinkle some chopped nuts on top.
