Hi Nancy, Ditto, and friends,
Lori R. in the July 11 newsletter was looking for a zucchini pie recipe that tasted like apple pie for her friend. Here is the one that I have in my files.

Zucchini Pie

Peel, Slice the long way, and scrape seeds out of zucchini. Cut up like apple slices and make 7 cups, cover and boil about 5 minutes in hot water. Drain. Put in bowl and add:
4 Tbsp. flour
1 cup sugar
1/2 cup brown sugar
1tsp. cinnamon
1/2 tsp. salt
2 Tbsp. lemon juice

dough for double pie crust

Mix thoroughly and place zucchini in large 9 inch unbaked pie crust in pie pan and pour the other ingredients over. Cover with top pie crust and flute to seal edges. Cut slits into top of crust for steam to escape. Bake at 350 degrees for 45 to 60 minutes, or until zucchini is tender. This tastes just like apple pie.
