Frozen Pudding Sandwiches
1-1/2 cups cold, skim milk
1-1/2 cups creamy or chunky-style reduced-fat peanut butter
1 4-serving size box Jell-O chocolate instant pudding mix
24 double graham crackers -- broken in half
Using electric mixer, on lowest speed, gradually add milk to peanut butter,
blending until smooth and creamy. Add pudding mix and continue to beat slowly
with mixer at lowest speed for two minutes. Let stand for five minutes.
Spread filling 1/2" thick on 24 of the cracker halves and then top them with the
other 24 halves, making sandwiches. Smooth the edges. Place in a plastic
container with lid and freeze until firm, about 3-4 hours.
I am sure you could use this filling and make them into fudgecsickles using
paper cups and sticks or molds, if you have them.
