Frozen Pudding
Sandwiches
1-1/2 cups cold, skim milk
1-1/2 cups creamy or chunky-style reduced-fat peanut butter
1 4-serving size box Jell-O chocolate instant pudding mix
24 double graham crackers -- broken in half
Using electric mixer, on lowest speed, gradually add milk to peanut
butter, blending until smooth and creamy. Add pudding mix and
continue to beat slowly with mixer at lowest speed for two minutes.
Let stand for five minutes.
Spread filling 1/2" thick on 24 of the cracker halves and then top
them with the other 24 halves, making sandwiches. Smooth the edges.
Place in a plastic container with lid and freeze until firm, about
3-4 hours.
I am sure you could use this filling and make them into fudgesickles
using paper cups and sticks or molds, if you have them.

Tomato Juice Meatloaf
1 c. tomato juice
3/4 c. oatmeal
1 egg
1/4 c. chopped onion
1/2 tsp. salt
1/4 c. chopped green pepper
1 1/2 lbs. lean ground beef
Heat oven to 350 degrees. Combine all ingredients except ground
beef; mix well. Add ground beef; mix lightly but thoroughly. Press
into 8"x4" loaf pan; bake 1 hour. Drain; let stand minutes. 8
servings.

Last night Lubbock had rain, wind and hail.
When there is lightning or it is very windy I do not turn on my
computer. I unplug it from the wall and wait til the weather has
passed. When I lived in Amarillo, lightning took out the mother
board and graphics board on my computer. Although it was plugged
into an expensive surge protect and was guaranteed if it was hit by
lightning, it took more than 6 weeks to get the money for a
replacement computer. Now it is much easier to just unplug it and
wait until weather has passed. During windy times there is a chance
that the wind can cause power surges and cause damage to the
computer. I learned that the hard way. Knew the lights were slightly
flickering but didn't realize the power surges could take out a
computer (even with a surge protector.)
About 10:00pm the storms had passed and the newsletter was posted
online. Sent out a message that it was online but evidently
Yahoogroups was updating their site. I could send it on out to
everyone. Did notice a lot of our members found the newsletter
anyway but the stats on the site. They went to the site and clicked
on the link to the newsletter even before Yahoo sent the message
out. Many times the newsletter is posted to the site hours before
Yahoogroups sends the message out.
Even if you haven't gotten a message from Yahoogroups you can check
to see if the newsletter has been posted. Go to
http://www.nancyskitchen.com
and bookmark (or make it a favorite) and click on it daily.
Many times you could go to the newsletter hours earlier than waiting
for the newsletter. You will need to press the F5 key (refresh) each
day on the top row of the keyboard.

Regarding the Jello Cream Cheese Pie. I
have friends who make this pie in a square pan and it turns out
fine. Whatever works for you is the answer. As for the seasonal
flavors of Jello I have read about in this newsletter, I can't seem
to find them in Buffalo but will continue looking. They sound
wonderful. Thank you all for your input.

I know that the "recipe" for feeders is
a 4:1 Mix of sugar and water and we used that for 3-4- years. But
had very little traffic to our feeder. We never boiled the water
either. We tried distilled water but they didn't care for that. Then
we switched to "spring Water" by the gallon at Walmart. And started
using 1/2 cup of water mixed with 1/4 cup sugar. That's almost
50-50, but boy they sure like it.Also, its mixed very well-they
don't like it "grainy". Stir and stir before you pour it in the
feeder. My DH changes the feeder every 3-4 days unless it's really
hot, but they are such fun to watch-especially when they are trying
to intimidate each other-we actually saw a couple of males bump
chests !! And just today I saw one feeding and Two others divide and
go after the one eating. Then they went up and down and round and
round- nobody was eating just chasing each other. But the biggest
thrill is when there are 3 on the feeder at once.

I buy a hanging fuchsia plant for my hummers
when the plants are on sale for Mother's Day each year. I
hang my feeder above it on a shepherd's crook and they love it. I
never add coloring to my homemade sugar syrup. The most import thing
is to change the syrup often enough so it doesn't spoil and to have
a hummingbird feeder that is easy to clean before each refilling.

Thank you for the info on the hummingbirds. How lucky you are to
have so many hummers visiting you. Maybe it's the climate here. N.C.
is a much warmer climate than New York.
I never put red food coloring in the feeder. I just use the sugar
and water. This year I am going to try a different location.
If anyone on Long Island has ever seen a hummingbird, please let me
know. At least I will keep waiting if there is some hope that they
may visit here. I guess my bird watcher friend may be right because
in the 3 years that I have put the feeder out, not one has appeared.
I have a cousin in Southern New Jersey who gave me the feeder and
says she sees so many there, and since she knows how I love the
garden and birds, she sent me the feeder thinking I will be so happy
to just watch the hummingbirds.

Dear Friends,
With the advent of summer gatherings, I thought the following recipe
would be appreciated. The beauty of this salad is that it is simple
and can be made a few days prior to any event. A homemade Italian
dressing can be substituted. Naturally, the amounts of the
ingredients can be "halved" for normal family meals. You are wished
a rainbow-filled season of delicious entertaining!

Sicilian Potato Salad
5 lbs. red potatoes
2 lbs. fresh green beans, ends removed
2 red onions, thinly-sliced
1 16 oz. bottle Italian dressing, divided
In a large pot, heat enough water to cover the potatoes to the
boiling point, then lower to "simmer" until fork-tender...about
25-30 minutes. Drain and peel the potatoes into bite-sized pieces.
Return them to the pot and cover to keep warm.
In another pot, heat enough water to cover the green beans and boil
until
tender. Drain the green beans and add to the warm potatoes with the
red onions. Gradually add the Italian dressing. It may not need the
entire bottle.
Cover and refrigerate overnight or until well-chilled. At serving
time, mix the salad to see if more dressing is needed, as the warmed
potatoes absorb much of the dressing.

May 24th. The suggestions from those that got the newsletter for
those having difficulty was to add the email address of the
newsletter to their address book. This seemed to increase the
likelihood of it arriving in their inbox.

Fresh Pear Cake
4 c. fresh pears, chopped fine
1 c. chopped pecans
1/2 tsp. salt
1 tsp. baking powder
1 tsp. soda
3 eggs, beaten
2 c. sugar
3 c. plain flour
2 tsp. cinnamon
1 1/2 c. Wesson oil
1 tsp. vanilla
Combine pears, sugar and nuts, let stand one hour. Add dry
ingredients to pears. Fold in well. Add oil, eggs and vanilla. Mix
with wooden spoon, or by hand. Pour in tube pan and bake 1 hour and
15 minutes at 350 degrees.
ICING:
Mix a little powdered sugar and milk together. Punch holes in cake
and let run down in cake. Then put a little on top - freezes real
well. Very moist.

Has anyone tried the product Loud 'n Clear you put in your ear to
help amplify the sound? It looks like a Blue Tooth. We saw it
yesterday at Rite Aid and I believe it has been advertised on TV in
the past. My S/O was interested in knowing if it really helps. He
has some hearing loss but does not want to use a hearing aid at this
time.

Mix all ingredients together except coconut, shape into balls and

Cow Pies
2 cups Milk chocolate chips
1 TBS shortening
1/2 cup raisins
1/2 cup chopped almonds
In a double boiler melt chocolate chips and shortening, stirring
until smooth. Remove from heat stir in raisins and nuts, mix well.
Drop by tablespoons on wax paper and let cool.

see and thank you Sharon for answering my request. I am very anxious
to try this recipe and I want to serve it to my sister in law and
her husband next week she likes all the new recipes that I have
served lately (all from this newsletter). We do have General Dollar
stores in my area so I will definitely be there before they close
tonight and the potatoes will be on my table tonight for hubby to
try. I saw McCormick's Chicken Seasoning at one of our grocery
stores but it was three dollars for a small bottle just too much
money for my low budget. I think my boy's will enjoy this recipe
also and if they like it as well as your friend's boy's do I will be
spending more time in my kitchen.

Moon Drop Cake
1 yellow cake mix
1 large Cool Whip
1 ( 16 oz) can crushed pineapple
1 cup sugar
1 (16-oz) sour cream
Mix cake by box directions (round pans or long cake pans) mix
crushed pineapple, sugar and sour cream together, take one cup of
this and set aside for icing. Put mixture between each layer but
not on top layer. Take Cool Whip and 1 cup of mixture and mix
together for icing, spread completely over cake and let cool. Keep
cake cool.
If I make it in long cake pan, after cake is cooled I slice my cake
into 2 layers. For round pans, bake in 2 round pans.

Hi Nancy--Jodi in KCMO asked for some sour mustard pickles. Here is
a recipe that might be what she is looking for.
Mustard Pickles
50 to 60 smooth small cucumbers
1 gallon vinegar
1/2 pound (16 tablespoons) dry mustard
1 cup salt
Wash cucumbers, pack into sterilized jars. Work the mustard into a
paste using a little of the vinegar, then dissolve it in the rest of
the vinegar. Pour cold solution over cucumbers to within a half inch
of the jar top. Put on the cap, and screw the band firmly tight.
When fermentation (bubbling) has stopped, process in boiling water
bath 15 minutes. Makes three gallons. I prefer this method because
the fermented pickles are not moved into another container after the
fermenting process.

Lemon Bar-B-Que
Chicken
Heat oven to 425°.
Mix:
1 cup flour
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons paprika
Coat one cut up frying chicken in mixture. Melt ½ cup shortening in
baking pan. Place coated chicken in shortening and bake 45 minutes.
Then baste with lemon bar-b-que sauce and bake until tender.
Lemon Sauce:
1 small clove garlic with ½ teaspoon salt
1/4 cup vegetable oil
1/3 cup lemon juice (juice of 2 lemons)
2 tablespoons finely chopped onion
1 teaspoon black pepper
1/2 teaspoon thyme
Mash garlic with salt. Mix well with remaining ingredients.
Note: I cheat on this recipe, when chicken is on sale and I have to
cook for a crowd I buy the family packs of cut up chicken pieces.

Regarding the Hummingbird Cake recipe
6/2 and many of the Jell-O recipes using
pineapple. My son is allergic to pineapple so I would like to find a
substitute for it in these recipes.
If anyone of the Landers has a solution please post it to the
newsletter. I enjoy your newsletter each time I have received it and
used several of the recipes I have found in it.

These really are tasty. However, when I made this I found that using
regular style taco shells was a bit messy. I'm going to use flour
tortillas this time and make them like a burrito. This is a great
way to get children (big folks too ) eat lentils.
Crockpot Taco Style
Lentils and Rice
3/4 cup dry lentils
3/4 cup brown rice
4 cups tap water
4 beef bouillon cubes
2 teaspoons chili powder
1/2 tsp. cumin
1 tsp. onion powder
1/4 tsp. garlic powder
Combine all ingredients in a crockpot and cook on low for 6 to 8
hours. The water should be mostly absorbed. Place in tortilla and
top with cheddar cheese.

Asparagus Salad
Water
24 Asparagus spears, fresh medium-sized
6 Red leaf lettuce; leaves
6 tb light mayonnaise
2 Tablespoons Pecans; chopped
Bring large pot of water to boil. Wash asparagus and snap off tough
bottoms of stems. When water is boiling, add asparagus and let water
return to a boil. Cook about 3 minutes, until asparagus is crisp but
tender. Remove asparagus, run it under cold water, and refrigerate
to chill. At serving time, line six salad plates with lettuce and
arrange four spears on each. Top salads with 1 tb light mayonnaise
and sprinkle with 1 ts chopped pecans.
Makes 6 Servings

Cindy, in the 6/2 newsletter looking for good “traveling”
breakfasts, why not make and take some breakfast bars? You could
make some good wholesome ones instead of the sweet sugary ones.
Also, you might think of muffins. Here is a great one that is also
healthy!
Basic Muffin Recipe
1 1/2 c. whole wheat flour
1/2 c. all purpose flour
1 tbsp. baking powder
3 tbsp. Sugar
1 egg
1 c. skim milk
6 tbsp. apple sauce
Preheat oven to 400 degrees. Mix first 4 ingredients together in a
medium size bowl. Mix last 3 ingredients together in another bowl.
Add liquid ingredients to dry. And mix with as few strokes as
possible. Line muffin pan with paper liners. Fill liner 3/4 of the
way full. Bake for about 20 minutes or until done. *Variations add
about 1 cup of fruit or vegetables and 1 teaspoon of spice.

Jean in NC, the 1 step angel food cake mix and lemon pie filling
does not raise when baked. That’s why I call mine
Angel Lemon Bars. I make this in place
of regular lemon bars. You did not do anything wrong! When you mix
pie filling with and angel food cake mix you will not get a “normal”
cake. That’s why the instructions say to use a 9x13x2 pan or a
cookie sheet with raised lip around all sides. Did you taste yours?
They do taste yummy!

Cincinnati Chili
2 tbsp oil
2 1/2 pounds ground beef
1 quart cold water
2 large onions, diced
1 (6-ounce) can tomato paste
1 1/2 tbsp vinegar
1 clove garlic, crushed
2 tbsp chili powder
1 1/2 tbsp unsweetened cocoa
5 bay leaves
2 tsp cinnamon
2 tsp cayenne pepper
1 tsp allspice
1 tsp Lea & Perrin Worcestershire sauce
Salt & pepper to taste
In a heavy gauge pot, heat oil; add beef and sauté until brown. Add
water and onions and bring to a boil. Reduce to a simmer and add
tomato paste and all other ingredients and let simmer 1 1/2 to 2
hours. Adjust with salt & pepper to taste. Remove bay leaves before
serving. In Cincinnati the true enthusiasts have their Chili 1 to 5
ways:
1. Plain
2. Two Way: Spaghetti and Chili
3. Three Way: Chili, Spaghetti, and Cheddar Cheese
4. Four Way: Chili, Spaghetti, Cheddar Cheese, and Onions
5. Five Way: Chili, Spaghetti, Cheddar Cheese, Onions, and Kidney

never got the recipe from my Mom either before she died, but I did
find one for all of us “kids”! If I remember correctly, Tupperware
had the popsicle containers.
Homemade Fudgesicles
1 c. whipped cream (you can use Cool Whip)
1 (3 3/4 oz.) Jello pudding mix (not instant)
1/2 c. sugar
2 c. cold milk
Mix and cook the pudding, sugar and cold milk, cool. Chill
thoroughly. Fold in 1 cup cream, whipped or Cool Whip. Pour into
paper cups and insert stick and freeze.
Homemade Fudgesicles
1 sm. pkg. instant chocolate pudding
1/4 c. sugar (optional)
4 c. milk
Combine all together and freeze in popsicle containers.
Fudgesicles
2 c. milk
1/2 c. sugar
2 tbsp. cocoa
2 lg. eggs
1/3 c. light corn syrup
1 tsp. vanilla
In a double boiler heat 2 cups milk. In a separate mixing bowl, mix
1/2 cup sugar with 2 tablespoons cocoa. Add 2 large beaten eggs and
1/3 cup light corn syrup to dry ingredients. Stirring constantly,
mix a little hot milk into chocolate blend and then a little more.
Gradually pour chocolate mix into milk, still stirring until mixture
just begins to coat the spoon. It should be smooth. Cool. Add 1
teaspoon vanilla and pour into molds, ice cube trays or paper cups
and freeze. When cool, insert popsicle stick and return to freezer
for thoroughly freezing. The fudgesicle recipes are courtesy of

1 box corn muffin mix, (9 oz) (not Jiffy)
1 box yellow cake mix, (2 layer type)
Prepare corn muffin mix per directions on box and cake mix per
directions on box in separate bowl. Pour prepared yellow cake mix
into prepared corn muffin mix and stir well. Pour into greased
9x12x2 pan and bake 350F for 30 to 35 min until toothpick comes out
clean.
