Mildred's Fried Cabbage
1/2 pound bacon
1 large head cabbage, cored and cleaned and coarsely chopped
1 large sweet onion, shredded
1/4 cup butter
salt & Pepper to taste
In a large skillet, fry bacon in butter until crisp then remove with a slotted
spoon to paper towels to drain. Shred cabbage coarsely and place in hot skillet
with shredded onion over medium heat. Place a lid or foil over cabbage and allow
to fry slowly, stirring now and then, to allow it to brown. DO NOT STIR IT TOO
OFTEN! Grandma always said that people worried things too much that they were
trying to fry . You must let things caramelize in the skillet, not burn mind
you, but brown. When cabbage and onions are nearly tender, remove lid and allow
any liquid to evaporate from skillet. The cabbage and onions should then be
tender and have even browning. Salt and pepper to taste and add bacon back to
skillet just before serving. I hope you like these as much as I do .
