Betty, who is wanting a recipe from long ago for shrimp; I have the
recipe card collection from 1971 from General Mills. I have looked
throughout the cards and do not find one that has tomato soup and
mayo. Now I have found one with the soup, but it is served over
patty shells, not rice. It could easily be served over rice, though.
I am enclosing it here. Hope it is the one! It was listed under
Impromptu Party Fare.
Jiffy Shrimp in Patty Shells
7 slices bacon, diced
1 c. minced onion
1 c. minced celery
1 can – 4 oz. – mushroom stems & pieces, drained
2 cans – 10 3/4 oz. ea. – condensed tomato soup
2 cans – 4 1/2 oz. ea. – shrimp, drained
½ c. finely chopped green pepper
6 baked patty shells
parsley
In skillet, fry bacon until crisp; remove and drain. Pour off all
but ¼ c. bacon drippings from skillet. Cook and stir onion, celery
and mushrooms in drippings until onion is tender. Stir in soup,
shrimp and green pepper; heat through. Serve in patty shells;
sprinkle with bacon and parsley. 6 servings. Betty Crocker.
