Spiced Pineapple
2 fresh pineapples
1 1/2 c. granulated sugar
1 c. distilled white vinegar
10 whole cloves
1 (3 inch) cinnamon stick
Cut pineapple crosswise into 1/2 inch slices; pare; remove eyes. Quarter slices;
remove cores. Combine sugar, water and vinegar; heat to boiling. Add spices tied
in cheesecloth bag, then pineapple. Simmer 30 minutes, stirring occasionally.
Remove spice bag. Continue simmering while quickly packing one clean hot jar at
a time. Fill to within 1/2 inch of top making sure vinegar solution covers
fruit. Cap each jar at once. Process 5 minutes in boiling water bath. Makes 2
pints.
