This is for Betty in MS. Wednesday, Nov. 11th. 2009 newsletter. Request for Recipe for Manicotti. My recipe is called Cheese Stuffed Shells. This may be the one she is looking for.

Cheese Stuffed Shells

Stuffing :
1/4 Cup fresh Parmesan Cheese
15 Oz. Ricotta cheese
8 Oz. light Mozzarella Cheese

Meat Sauce:
1 Lb. Ground Chuck
2 Tablespoons Olive oil
1/2 Cup Chopped Onions
2 or 3 Cloves of garlic (pressed)
1 Tablespoon Basil
1 or 1 1/2 Tablespoons Italian Seasoning
1/4 Teaspoon Sugar

Manicotti or Jumbo Shells
Cook shells (according to package directions) and drain well.

For meat sauce:
Sauté onions, Garlic, Basil, & Italian seasoning in olive oil. Add meat and brown well. Drain excess fat. Add Ragu sauce and Sugar. Simmer 10-15 minutes.

For Cheese stuffing:
Mix all three cheeses well in large bowl.

Spoon some of the meat sauce into the bottom of a 9x13 baking dish. Stuff each shell with approximately 1 tablespoon of the cheese mixture. Lay shells in dish with open side down.
Pour remaining sauce over shells. Bake at 350 degrees for 30 to 40 minutes.
