Russian Teacakes (or "Snowballs")

1 cup butter -do NOT substitute
1/2 cup powdered sugar
2-1/4 cup flour
1/4 tsp. salt
1 tsp. vanilla extract
3/4 cup chopped nuts (I use walnuts, pecans, or peanuts) additional
powdered sugar

Mix all ingredients together (except the additional powdered sugar) in the bowl using an electric mixer, just until thoroughly blended. Don't over-mix. Form into small balls and place on ungreased baking sheets.

Bake at 400º for about 10 minutes. Do not brown. They should be firm, but still white. Roll in powdered sugar when warm and re-roll again when cold. Makes about 4 dozen cookies. They store well for quite awhile, if in a tightly sealed container, and they also ship well. My oven bakes a little hot, so I only turn it to about 375º.
