Almond Biscotti
In a processor grind together until powdery:
3/4 cup almonds
3/4 cup sugar
Add the rest and pulse until combined:
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/3 cup honey
1/4 cup vegetable oil
1 large egg
1 large egg yolk
1 teaspoon finely grated orange peel
Finally knead in:
3/4 cup whole almonds
Form into 2 logs on greased cookie sheet(s). Bake 350 20-25 minutes. Let cool 10
minutes and cut with serrated knife into slices. Turn slices on their side and
bake 300 oven for an additional 10 minutes on each side.
