Here is another cupcake recipe for Maggie B, who in the 10/11/09 newsletter requested cupcake and muffin recipes. This recipe is from Dennis at the Prepared Pantry.

Banana Cream Filled Cupcakes

We?re always looking for recipes to use up extra ripe bananas. This is a good one. It?s easy because it starts with packaged cake mix from the store.

Because the filling is perishable, the cupcakes and any leftover filling should be refrigerated.

This recipe was tested using a Betty Crocker? cake mix.
1 package yellow or white cake mix
4 large eggs
1/2 cup water
1/3 cup vegetable oil
2 small ripe bananas, mashed
1/2 teaspoon nutmeg
1/2 recipe Banana Pastry Cream
1 recipe Seven Minute Frosting with a touch of yellow food coloring added

1. Add the eggs, water, oil, bananas and nutmeg to the cake mix. Mix as per the package instructions. Bake as per instructed for cupcakes.

2. Using a star or tube pastry fitting, fill the cupcakes by inserting the fitting in the top of the cupcakes and pressing about a tablespoon of filling to each cupcake.

3. Make the frosting and frost the cupcakes. Decorate with sprinkles if you like.
