Hi Nancy. Think I've got a 'relative' of Dianne in
Wisconsin's old time potato recipe. And she's right, they're really good.
Grated Creamed Potatoes
an old fashioned goody to make in advance
3 baking potatoes
1 to 1 1/8 c. heavy whipping cream
Salt & coarse pepper
Cook potatoes in their skins; cool, peel, & grate into a 1 1/2 qt. buttered
casserole**, salting & barely dusting with pepper after each potato. Cover
tightly with plastic wrap & chill 8 hours to overnight.
To bake, heat oven to 350?, pour cream all over potatoes, & bake 1 hour. **If
using a clay or china baker, set at room temperature 20 minutes & start in a
cold oven. This will hold, covered, for 15 minutes. Simple but excellent;
several qualities make it a great company potato dish. Serves 4, if doubled, use
a larger but not much deeper baker. Amazing with Swiss Bliss Baked Steak. Also
Slow Cooker Short Ribs or any pork roast. Somebody deserves thanks, wish I
remembered who.
I love the old dishes best too.
