Here's a very nice cold Pasta Salad for Sue's request in the October 30 newsletter:

Pasta Salad

1 box Barilla whole wheat pasta twists (or tri-color)
1/2-3/4 C Mayo
1 can sliced black olives - drained (kalamata are best)

10 or more grape tomatoes quartered
1/2 bottle Italian vinaigrette OR Caesar w/parmesan dressing
1 C frozen tiny green peas
1/4 tsp pepper
1 jar marinated artichokes – pat off oil & cut
Swiss or feta cheese (feta for stronger flavor)

Cook pasta in salted water, drain, & toss in ~1 tbls olive oil; add dressing & allow to sit while cutting and combining rest. Cool & add mayo - toss to blend. Gently fold in rest.
