For Gloria Dixon... Where did you find the
Master Cook
Program. I
cannot find it around here. As I have said, I have Master
Cook version 5 on one of my computers but Jim says it needs
to be a higher version. I searched and so far have not found
it at any of my stores.

MasterCook 9.0 for sale on Amazon
I don't use Mastercook myself. I like the ease of
HomeCookin. I will import in many
formats including MasterCook format. For those that like a
lot of recipes for MasterCook (or
HomeCookin)
Mad's Recipes
is a great site. They have many different recipes. He has no
ads on his site and has so many recipes to share. You do
need to allow for popups so that the recipes can be
downloaded. If you download recipes I recommend making a
donation to his site. He has worked so hard on his site for
many years without any revenue coming from the site..

Hi everyone. Here is another handwritten recipe from the
boxes full of recipes. It is stained and faded, but I have
another copy since this was not only my favorite cookie when
living at home, but is my own children's favorite. This
original recipe only has the ingredients with "ungreased
sheet-350--10 min" at the end. I assume she made this copy
for herself and NOT for inexperienced bakers. My copy has
the directions, so here goes:
California
Rangers
1 cup shortening like Crisco
1 cup white sugar
1 cup light brown sugar--packed
2 eggs (large)
1 tblsp milk
1 tsp. vanilla
2 cups all purpose flour
1 tsp. soda
1/2 tsp. baking powder
1/2 tsp salt
2 cups rolled oats (not instant)
1 cup coconut
2 cups corn flakes
Sift flour, soda, baking powder, and salt together in a
bowl. Set aside. In large mixing bowl, cream shortening and
sugars, add eggs one at a time and mix well after each
addition. Add milk and vanilla. Mix. Add flour mixture a
little at a time to the creamed mixture, scraping bowl
often. Now add rolled oats, coconut and cornflakes. Mixture
will be thick. I have always added these last 3 ingredients
by hand mixing with a wooded spoon.
Place rounded teaspoonful of dough on ungreased cookie
sheet*. Bake at 350 degrees for 10 minutes.
*I have used my hands to squeeze the dough together from the
teaspoon before putting on the cookie sheet.
These are chewy cookies and so good.

This is a T&T recipe that my daughter made for a family
gathering. It is so good and so easy to make.
Pork
Tenderloin
3 lb. pork tenderloin, trim fat
1 lb. thick bacon (not smoked)
1/2 c. soy sauce
1 T. minced onion
1/2 t. garlic salt
1/4 t. salt
1/2 c. sugar
Dash pepper
Wrap bacon strips completely around tenderloin. Combine rest
of ingredients and marinate tenderloin 3 -5 hours. (5 is
best) Bake at 300 degrees uncovered 2-3 hours (3 is best)
Baste often (every 15 min. or so) Cool slightly. Slice in
thick slices to resemble filet mignon. So tender!!

The kitten, That One,
has been spending much of his time out of the yard each day.
Thursday he was attacked by a pit bull dog in the
neighborhood. He did not live through the attack.
He managed to make it to my backyard before he died.
Yellow One and Little One are OK. Yellow One now lets
me pet him and waits for me when I come out to feed them.
Little One spends most of her days indoors with Ditto.
Today Tom and Karen came over. Tom was watching a
football came (with his eyes closed.) Ditto and Little
One were asleep in his lap. All
Little One wants for Christmas is a lap to
lay on and a loving home.

evening and can't believe how talented they are. Their
carved wooden clocks are all unique and so beautiful. Each
item they make is made with love. Recently I got a cribbage
board. It is so pretty. Now if I could just remember how to
play cribbage again. Will have to look up info on the net.

Does anyone have a recipe for the
Chocolate Wave Cake from Red Lobster.
It is a dark moist chocolate cake served with vanilla ice
cream and chocolate syrup. It is to die for. I would love to
make a cake like this, if anyone can help.

This is for Duffy's request in October 10th newsletter. I
too think this lotion is great. I mix mine up in a gallon
zip lock bag and it works well.

Body Lotion
1 -15 Oz. bottle of Baby Lotion
2 - 4 Oz. jars of Vitamin E Cream
1- 7.5 oz. Vaseline
Put all three ingredients in the large mixing bowl, and
blend well with the mixer, using the rubber scraper to
assist. When well blended, fill jars with screw-on lids,
label, wrap and enjoy! The baby lotion helps give it the
lovely fragrance, and remember that Vaseline also contains
Aloe.

Hi Nancy & Ditto, Re: Oct. 10 N/L. Sharri in Mi. I don't
have a miniature muffin tin but always bake my muffins in a
muffin top tin. I usually use a packaged muffin mix, and
have found that 10 min. at 350 degrees is perfect for the
"Tops". DH says muffin tops don't crumble like the regular
muffins do when you eat them. We have these several times a
week.

Sylvia <Scotland>, I, too, thought something might be
missing or else a misprint in Dianne in Wisconsin's Crockpot
Caramel Rice Pudding. I can?t believe it calls for 3 cups of
rice! 3 cups of raw rice would make a tremendous amount of
rice pudding! Dianne, can you help us here? Thanks!

Ranger Cookies
1 cup shortening, part butter for flavor
1 cup sugar
1 cup brown sugar
2 eggs
2 cups flour
1/2 teaspoon baking powder
1 teaspoon soda
1 cup coconut
2 cup Wheaties
2 cup quick-cooking oats
1 teaspoon vanilla
1/2 teaspoon salt
Cream shortening, and add the sugars gradually and cream
thoroughly. Blend in well -beaten eggs. Add flour, soda,
salt & baking powder to the creamed mixture. Blend in the
vanilla, oatmeal, Wheaties and coconut. Drop by teaspoonfuls
on well-greased baking sheet. Bake 12 to 15 minutes at 375
degrees.
I don?t know how old this is, but pretty old! This recipe is

Becky, I am sorry you didn?t get some of your Mothers?
recipes! Don?t hesitate, ask your family now while you can,
everyone, and make up a booklet like I did! You won?t be
sorry. About 10 years or so ago, before my Mother passed
away, I wrote to all my aunts, cousins, sister and brother
and Mom and asked for some of their favorite recipes they
have made time and again. I also used some of my
grandmother?s. I then compiled all the recipes into sections
i.e. Appetizers, etc. and painstakingly typed them all up.
Then I printed them up, adding some of my own favorites and
made cookbooks! I gave Mom and my 3 aunts all hard copies,
as well as my daughter and myself; and the rest I made discs
for cousins, etc. I put a photo of my grandparent?s picture
on the cover and sent them all for Christmas! I was so glad
to have done that because my Mom passed away the following
Jan. Some of those recipes are listed in
Nancy?s old
fashioned recipes to the left of the newsletters.

Sorry I didn't make this clear. the
vanilla and chocolate
wafers are the coating wafers (candy type) just melt them
together.

This is usually an overlooked vegetable. It can be very
tasty if served this way.
Spaghetti Squash Gratin
1 spaghetti squash
2 - 3 cloves garlic, minced
1 tbs chopped fresh thyme
2 tbs chopped fresh parsley or 1 tbs dried parsley
8 oz sour cream
3/4 cup grated Asiago, Parmesan or Romano cheese
S/P to taste
Additional 1/2 cup of cheese, 2 tbs melted butter and 1 cup
(slightly crushed) croutons for topping the casserole
Cook squash your favorite way and let cool to touch.
Carefully run the tines of a fork lengthwise over cut
surface of squash to loosen spaghetti-like strands; scoop
out strands.
Combine garlic, thyme, parsley, salt, pepper, sour cream,
and 3/4 cup cheese in small bowl.
Fold into squash and place into a buttered casserole dish.
Top with remaining cheese/butter/crouton mixture.
Bake 475 for 20 min or until lightly browned.
For a little more crunch to the top crust I usually finish
this under the broiler for a minute or two.

Peanut Butter Cranberry Cookies
In processor mix together:
1C butter, soft
1C white sugar
1C brown sugar
2 eggs
1t vanilla
1C peanut butter
3C flour
2t soda
1/2t salt
Pulse into above mix only until barely incorporated:
1 1/2 cups whole fresh cranberries
Drop by rounded teaspoon. Bake at 350 for 10-12 minutes

Hi Nancy ~ In the Oct 9th newsletter Chris from NM commented
how she has trouble with
keeping the breading on chicken. Also Duffy
commented about she has the same problem. I am almost 80
years old and I found a long time ago that if you dip the
meat in the flour first, dip it in the beaten egg (also add
a little milk) and finally in the French Onion Rings, Panko
bread crumbs, Crackers or whatever you are using, the
breading will stay on the meat when it is cooked. I have
just started using the Panko bread crumbs the last few
years, or the French's Onion Rings, and they have become my
crumbs of choice. Nice and crispy when they come out of the
oven. If you know what the Coconut Shrimp from Red Lobster
tastes like, the meat comes
out nice and crispy like them.
Hope this helps Chris and Duffy and anyone else that has a
problem with breading not adhering to the meat.

I have been sorting through all the recipes I have used in
the past. Here are two of my favorites.

Peach Cake
1 white cake mix (2 layer)
1 cup milk
1 small package regular vanilla pudding mix
1 cup sour cream
1 (14-16 ounce) can sliced peaches, drained
1 (8 ounce) container Cool Whip
Bake the cake according to box directions, in a 9 by 13 inch
pan. Cook milk, vanilla pudding mix and sour cream. Set
aside and cool. Cover top of cake with drained peaches.
Spoon pudding mixture over peaches. Spread container of Cool
Whip over the pudding mixture. Sprinkle nuts on top of cake.
Note: I tried using sugar free and low fat brands of the
sour cream and Cool Whip. I also used the lite sliced
peaches. It worked out well. I found that cutting the
peaches in small pieces made the cake easier to cut and
serve.

Peanut
Butter Pie
1 (8 ounce) package cream cheese
3/4 cup powdered sugar
1/2 cup creamy peanut butter
6 tablespoons milk
1 (8 ounce) container Cool Whip
Cream the cheese until fluffy. Add sugar and peanut butter.
Mix and add milk. Fold in Cool Whip. Refrigerate overnight.
Note: I used the recipe a lot for days all the teachers
would share treats with each other. It was so easy I usually
made two.
