Chocolate Pudding Cake

1 stick oleo ? I use butter
1 c. flour
1 c. chopped nuts
8 oz. pkg. cream cheese
1 c. powdered sugar
1 c. or more Cool Whip from 9 oz. carton
1 sm. box chocolate instant pudding
1 sm. box vanilla instant pudding
2 c. milk

Combine oleo, flour and nuts. Press into 9 x 13 inch pan and bake at 350 degrees for 20 minutes. Cool. Fill with the following blend - cream cheese, powdered sugar and Cool Whip. Top with the pudding mixture - both pudding packages mixed with 2 cups milk. Top with rest of Cool Whip. (you could use ice cream here.)

Nancy, your recipe for Peanut Butter Pie in the October 10 newsletter did not say whether to pour into pie shell or what. Do you use a cooked pie shell or graham cracker shell? Sounds really good and I want to try it soon.

1 (8 ounce) package cream cheese
3/4 cup powdered sugar
1/2 cup creamy peanut butter
6 tablespoons milk
1 (8 ounce) container Cool Whip

Cream the cheese until fluffy. Add sugar and peanut butter. Mix and add milk. Fold in Cool Whip. Refrigerate overnight.

Note: I used the recipe a lot for days all the teachers would share treats with each other. It was so easy I usually made two.

It does go in a pre-baked pie shell. I usually used graham cracker crumbles on the bottom of the pie instead of shell.

Thanks, Sunshine in South Texas for your tip on how to keep the breading on meat when cooking. I do what you suggest on my coconut shrimp. It works every time!

RE: Sent in soup recipes and now can't find them.

I figured out a month or two ago that if I go to the search box that Nancy gives us (Google Custom Search)and search my name as I signed my recipes etc. to the site, that I can find stuff I sent in or was referenced to in. I sign the same every time, but I noticed you have signed Name/N. Alabama and Name/N. Ala. You will need to check any variation you used or just try your first name alone- but you will get stuff others w/ your name sent in too. That trick helped me find my mom's chili recipe I sent in then misplaced. Happy Hunting.

I came across this old recipe for Rice Balls. This is not the Sicilian Arangini that is stuffed with meat and peas, etc.

Rice Balls

1 lb. converted white rice, rinsed
1 lb. ricotta
1 (8oz.) package shredded mozzarella
1/2 c. grated Parmesan cheese
2 eggs, separated
1 tsp. chopped fresh parsley
Freshly grated black pepper
2 c. flavored bread crumbs
Oil for deep-frying

Cook rice according to package instructions, making sure water is completely absorbed. Allow to cool for about 15 min.

In a mixing bowl, place ricotta, mozzarella, grated Parmesan, 2 egg yolks, parsley and black pepper. Blend well. Fold in cooked rice and refrigerate mixture for about 30 min. While rice mixture is chilling, beat egg whites until stiff - set aside

Form balls, about the size of meatballs, of the rice/cheese mixture. Dip each rice ball into beaten egg white and then into breadcrumbs.

Deep Fry rice balls in hot oil, a few at a time (do not crowd) until golden brown. Drain on paper towels. Makes about 16 to 20. I have not tried these, but they probably would make a nice appetizer.

With regards to cooking bacon, I cook mine on the George Foreman grill. The grease content is less and they cook up flat. May take longer but well worth it. Enjoy!!

Dear Nancy,
Thank you for the chance to help...Sara, found the higher version of Master Cook on E-Bay, and was around $15.00 with shipping. I did research Version 9 and found some people had trouble working program with the Vista operating system (if you have Windows XP or lower, it seems Version 9 works OK). Now with all this encouragement, I am starting to organize recipes and planning a dinner party...hey, what a great way to tell friends you care, feed them!

Sara in FL, I don?t have that clone recipe for Chocolate Wave Cake from Red Lobster, but if you look in the listing of Oct. newsletter recipes, on Oct. 4th I sent in my recipe for flourless chocolate with raspberry sauce. It is deep dark chocolate and moist. You could put ice cream on it. Also, in Nancy?s Old Fashioned recipe section just to the left of the newsletters I sent in an awesome chocolate cake recipe that has been in our family for years. Maybe one of these is close to what you are looking for. Must be time for chocolate!

Cookie Sheet Cake

2 cups flour
2 cups sugar
1 teaspoon baking soda
2 teaspoons cinnamon

Put in large mixing bowl and mix well before adding the following:
2 sticks margarine or butter
2 tablespoons cocoa
1 cup water

Put the 3 ingredients in a saucepan and bring to boil and then add to the mixture in large bowl. Add 2 eggs and 1/2 C. buttermilk and 1 tsp. vanilla. Beat well and bake on a floured and greased 1 inch thick cookie sheet at 350 degrees for 15 to 20 minutes.

Icing:
1 stick margarine or butter
4 Tbl. cocoa

Bring to boil and add 6 Tbl. buttermilk. Add 1 lb. powdered sugar and nuts and 1 tsp. vanilla. Frost cake as soon as it is removed from oven. This is so good!

This recipe is from my mom and aunt. It is about 65 years old. Old Time Recipes

Question for Chris in NM, the recipe for Raspberry and Cream Salad (Oct 5, 3009) doesn't state what kind of dish you put this in. I would like to make this for company coming next month.

The recipe for the body lotion is two(2) four ounce jars of Fruit of the Earth Vitamin "E" skin care cream, two( 2 )Equate (Wal-Mart brand) baby lotion, and one 3.75 ounce jar of Vaseline; I cut open the baby lotion bottles in order to get it all out. I then mix all the ingredients with my stand mixer in a large bowl and put into small containers with lids. It makes a lot and I use it for an all over body lotion.

I have found that our local health food store sells their spices in bulk and cost less than what you would pay at the grocery store. Also you only buy what you need and can have a fresh supply. I don't know how their price compares to those bought on-line.

Death By Chocolate Cake

4 eggs
1 cup sour cream
1/2 cup water
1/2 cup oil
1 package chocolate fudge cake mix
1 package chocolate instant pudding
12 ounces semisweet or dark chocolate chocolate chips
confectioners' sugar

Beat eggs, sour cream, water and oil together in a large bowl until thoroughly mixed. Add cake mix and pudding mix. Beat until smooth. Stir in chocolate chips. Pour into bundt or tube pan and bake at 350F for 1 hour. When cool, sift powdered sugar on top of cake.
