Recipe for Florence in Indiana for "seed tapioca". Pearl tapioca comes in small and large pearl sizes. It requires longer cooking than the granulated tapioca found in the red box in grocery stores. The recipe below can be used with either small or large pearl; however I prefer small pearl tapioca as it swells considerably when cooked.

Slow cooker pearl tapioca recipe:

2 quarts milk
1 cup small pearl tapioca
1-1.5 cups sugar, can also use sugar alternative such as Splenda
4 beaten eggs
1 tsp vanilla.

1. Add milk, tapioca, sugar to slow cooker.
2. Cook on high 3 hours. Do not overcook as milk can scorch
3. In another bowl, mix beaten eggs, vanilla, and a little hot milk from slow cooker.
4. Add to slow cooker.
5. Cook 20 more minutes.

Recipe can be halved as it serves 10-12 but keeps well in refrigerator.
