This is usually an overlooked vegetable. It can be very tasty if served this way.

Spaghetti Squash Gratin

1 spaghetti squash
2 - 3 cloves garlic, minced
1 tbs chopped fresh thyme
2 tbs chopped fresh parsley or 1 tbs dried parsley
8 oz sour cream
3/4 cup grated Asiago, Parmesan or Romano cheese
S/P to taste

Additional 1/2 cup of cheese, 2 tbs melted butter and 1 cup (slightly crushed) croutons for topping the casserole

Cook squash your favorite way and let cool to touch. Carefully run the tines of a fork lengthwise over cut surface of squash to loosen spaghetti-like strands; scoop out strands.

Combine garlic, thyme, parsley, salt, pepper, sour cream, and 3/4 cup cheese in small bowl.
Fold into squash and place into a buttered casserole dish.
Top with remaining cheese/butter/crouton mixture.

Bake 475 for 20 min or until lightly browned.
For a little more crunch to the top crust I usually finish this under the broiler for a minute or two.
