Clotted Cream
2 cups heavy non pasturized cream
Set a coffee filter basket lined with a filter in a strainer
over a bowl. Pour cream almost to the top.
Refrigerate 2 hours. The whey will sink to the bottom.
Scrape down ring of clotted cream with a rubber spatula.
Repeat every 2 hours until consistency of cream cheese.
