RE: A group I belong to has refreshments after the
meetings. Since one of the members is diabetic I would like to make something
that she can have too. I asked her for some recipes but she said she doesn't
cook anything for herself. I also volunteer at the school and usually make
cookies for the second grade once a week. This year one of the kids is also
diabetic. She can have a cookie depending on her blood sugar. Does anyone have a
diabetic cookie recipe or dessert that I can make without buying a lot of
specialty items? Thank you in advance.

Betty, good timing, the following recipe appeared in our newspaper yesterday. I
have not tried it yet but others I have tried have been good.
Klee Cookies - Diabetic Cookies.
3/4 cup sultanas - golden raisins I think you call them
1/3 cup lemon juice
finely grated zest of one lemon
2 tsps Equal powder
2 tbs margarine
1 beaten egg
3/4 cup self raising flour
Soak the sultana's and zest in lemon juice for 1 hour.
Mix equal and margarine together, then add egg mix , and add sultanas and juice
mix.
Lastly add the flour. Place spoonfuls on a greased oven tray and cook, top shelf
at 180C (350F) for 10-15 mins.
Cool for 5 mins before transferring to a wire rack.
