Harvest Cake (Low Fat/Low Sugar)
Mix until well combined and set aside:
1 cup flour
3/4 cup Sugar or Splenda
2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
Toss together:
1/2 cup peeled and grated apple(1 medium-sized apple)
1/2 cup grated carrot (1 medium carrot)
1/2 cup grated zucchini
1/2 cup chopped pecans or walnuts
Add to above until well coated w/flour/sugar mixture
In a separate bowl mix until well blended:
1/4 cup canola oil
1/4 cup buttermilk
2 large eggs
Pour over flour mixture and stir until just combined.
Mixture will be stiff.
Pour cake into oiled/sprayed loaf pan. Bake 350 50-60
minutes. Cool 10 minutes before removing from pan and cool
on rack.
