The purpose of this recipe newsletter is
to post requests and replies from our members and to post
all their great tried and tested (TNT) recipes
Simple Jelly Thumbprint Cookies
Cream:
3/4 cup butter, softened
1/4 cup white sugar
1/4 cup brown sugar
2 eggs
Add:
1/2 tsp vanilla extract
1/2 tsp salt
1/2 tsp cinnamon
Add spoonful by spoonful:
1 3/4 cups all-purpose flour
Jelly, jam or fruit preserves
Preheat oven to 350.
Using a cookie scoop or about 1 tbsp formed ino a ball and
place on a cookie sheet that has been lined with parchment
or greased.
Dip your thumb into flour, then press into a ball. Repeat
until all the cookies have thumbprints in the center. Fill
the hole with your choice of jelly, jam or preserve.
Bake for 10 to 12 minutes, until golden brown around the
edges and on the bottom. Let cool on wire racks.

Hello Nancy it has been a while sent I
have sent a recipe. Sarah Hall, Jackson, MS September 2,

A Nurse friend of mine shared this recipe that she has made
up her self.
It is delicious.
Breakfast
Shake (or any time shake)
1 box of chocolate instant pudding mix (sugar free)
3 cups of milk
a few ice cubes (about 3)
2 Tablespoons Natural peanut butter (if you like)
Put all into blender and blend until smooth. Drink.
Also, you can use vanilla pudding and add 2 Tablespoons of
coffee and some almonds or any other nuts and blend and
drink. That sounds great!

This is for Helen (9-1) who wants some
ideas for a Hamburger dinner. I was at one recently and the
hostess, my niece, prepared sides of grilled onion,
mushrooms, choice of cheeses, chili's and of course lettuce
& tomato. She also served corn on the cob and roasted
potato's. This was topped off by a homemade berry pie & ice
cream.

Hi Nancy: Re: 9-1-09 N/L, Judy in Alaska regarding an 8x16
baking dish. I would use 2 8x8 glass pans I have (since
there are only DH and myself) then one can be frozen if not
used for later. Margaret, Tulsa
For the cookout on labor day,
the lady of the house might try old standbys. Potato Salad,
Green Salad or Relish Dish, and Baked Beans. and easy
dessert of some kind.
This reminds me of a joke the guests are all complimenting
the man for what a great job on his cookout. The wife is the
one who went shopping, prepared the meat for the grill,
fixed all the condiments an extras. All he had to do was
grill.
Robbie IN, Brooxie in GA and Jan in Pennsylvania, was asking
about the Log Cabin Chocolate Cake I sent in for the 8/30
newsletter. I just reread it, ladies, and I would use a 9x13
pan. If you have a large bundt pan, that might work, but not
the regular size one. The cake would overflow it.

Judy (in Alaska), when I make a cherry dump cake, or any
flavor dump cake, I use a 9x13x2? baking dish. Yes she means
pie filling. Below is the one I use all the time. It is
great for potlucks. You can easily double this or triple it
for large crowds. It is a favorite dessert at our Moose
Lodge! Sue?s recipe uses flour and sugar instead of the cake
mix. You can serve these dump cakes either cold or warm and
with ice cream or cool whip or just as is.
Cherry Dump Cake Cobbler
1 (16 oz.) can crushed pineapple, undrained
1 can cherry pie filling
1 yellow cake mix (dry)
1 cube butter or margarine- 1 stick or 1/2 cup
1 c. chopped nuts - pecans
Put pineapple in bottom of pan. Add cherry pie filling
evenly to pineapple. Next, pour dry cake mix over the top.
Cut cube of butter or margarine into thin slices and lay
evenly over dry cake mix. Sprinkle chopped nuts on top and
bake at 350 degrees for about 40 minutes. Use 9 x 13 pan. I
just made this again and had to extend the baking time to 1
hour. It looks perfect!

great baked bean recipes. You could also serve the very,
very popular grape salad. The recipe for the grape salad can
be found in the July list of recipes. Here is a popular
coleslaw recipe that I believe Myron Drinkwater first

KFC Cole Slaw Clone
1 large head green cabbage, finely chopped *
1 medium carrot, shredded *
1/2 cup granulated sugar
1/2 tsp salt
1 pinch ground black pepper
1/4 cup milk
1/2 cup good quality mayonnaise (Not Miracle Whip)
1/4 cup buttermilk
1 Tbsp white vinegar
2 Tbsp lemon juice
* The cabbage and carrot should be chopped very finely, about the
size of a kernel of rice. (I use my food processor and pulse the
cabbage and carrot until the right size is achieved.) In a small
mixing bowl, thoroughly combine the sugar, salt, black pepper, milk,
mayonnaise, buttermilk, vinegar and lemon juice, beating until the
mixture is smooth. Place the diced cabbage and carrot in a large
mixing bowl and pour the liquid dressing over the top. Mix well or
until all of the cabbage and carrot are thoroughly coated. Transfer
to a serving bowl, cover and chill in the refrigerator for at least
2 hours before serving. Cover and refrigerate any leftover cole
slaw.
Yield: About 8 servings.

Frosty Mandarin Oranges
1 (6 oz.) pkg. orange Jell-O
2 c. boiling water
1 can mandarin oranges
1 pt. orange sherbet, softened
Dissolve Jell-O in water. Drain oranges, measuring syrup, add water
to make 1 cup. Add this to Jell-O mix. Chill until slightly thick.
Blend in sherbet and oranges. Pour into mold and refrigerate.

Non Dairy Ice Cream
1 (1.7 ounce) package instant vanilla pudding mix
3 cups non-dairy whip cream
2 cups fat free non-dairy creamer (dry)
1 cup water
1 teaspoon vanilla extract
Combine ingredients into a large bowl and mix with a hand mixer
until smooth. Pour into plastic container and freeze 2 to 3 hours
before serving.
You can make non dairy chocolate with chocolate pudding and put some
cocoa powder in.. to suit your tastes.

Orange Ice
1 cup orange juice
1 cup sugar
1 1/2 cups water
2 tablespoons lemon juice
few grains salt
Combine water, sugar, and salt. Heat to boiling, and boil 5
minutes.
Cool, add fruit juices and freeze.
6 servings.

Nancy Helen in 9/1
newsletter was wanting recipes for a hamburger
and hot dog cookout. How about deviled eggs, healthy potato
salad (as healthy as I can get it), beet salad or mixed
vegetable salad with beets. What I do when taking deviled
eggs to a pitch in I make half with pickle relish and the
other half with salt, pepper, mustard and miracle whip with
bacon on top.
Healthy
Potato Salad
6 to 8 red potatoes, use the size you want
2 to 3 tablespoons Hormel's 50% fat bacon pieces
4 green onion including the green part
salt & pepper
Miracle Whip
First I was the red potatoes well. I get the small red
potatoes and microwave them until done. I let them cook for
about 5 to 10 minutes. I cut the potatoes in half, then in
half again and then dice the size you want. NO NOT PEEL the
potatoes. Add the rest of the ingredients and mix well.
Refrigerate at least the rest of the day. They can be made
in the night and served the next day,

Vegetable Salad with Beets
1 cup cooked potatoes, diced
1? cups cooked carrots, sliced
1? cups cooked green beans
1? cups cooked peas
1 cup raw celery, sliced
1 cup cooked beets, diced
2 hard cooked eggs, chopped
1 small onion, chopped
3/4 cup small pimento stuffed olives
lettuce
Chill vegetables, eggs and olives separately. Just before
serving arrange lettuce in large bowl.
Dressing
3/4 cup Miracle Whip
1/3 to ? cup chili sauce
2/3 teaspoon lemon juice
Just before serving, combine all ingredients and toss with
salad dressing.

Beet Salad
1 large can beets, drained
? cup chopped dill pickles
? cup chopped olives, optional
? cup chopped onions
? to ? cup Wishbone Italian dressing
4 to 5 leaves of lettuce, hand shred
Place first 5 ingredients into a covered salad bowl mixing
well then to marinate. Put in refrigerator to chill, 30 to
60 minutes. When ready to serve, add shredded lettuce. Mix
well.

Now that it is getting cooler and more thoughts are turning
to baking and Fall, I make this dish for potlucks. Oh yummy!
Easier than a pie! This is kind of like Judy in Alaska?s but
a bit different!
Pumpkin Dump Cake
1 (29 oz.) can pumpkin
1 c. sugar
1 (13 oz.) can evaporated milk
3 eggs
4 tsp. pumpkin pie spices
1/2 tsp. salt
1 box yellow cake mix
1 1/2 cubes (3/4 c.) butter, melted
1 c. pecans, chopped
Combine pumpkin, sugar, evaporated milk, eggs, pumpkin pie
spices and salt in mixing bowl. Beat well. Pour into greased
and floured 9 x 13 inch glass pan. Sprinkle cake mix over
pumpkin mixture, then sprinkle on the pecans. Pour melted
butter over all. Bake at 350 degrees for 50 to 60 minutes
until knife inserted in center comes out clean. Watch
closely at end. Burns easily. Serves 12 to 15. from Nancy's

Hi Nancy,
I spent last week in Gatlinburg, TN and I bought a
jar of pumpkin butter. It is delicious. I had never
tasted it before and would like to make some. I ask the
young lady in the gift shop before I purchased it if it was
good. She said, " it is delicious, it taste just like the
best pumpkin pie you have ever eaten, without the crust."
She was right. I am wondering if anyone in Nancyland has
ever made it and would the please share the recipe.

1 med. size head of cabbage
salt & pepper to taste
1 ice cube
Place ice cube on top of cabbage & seal into one large foil
packet. Place on grill or hot coals for 20 min. Turn
occasionally. Cabbage will be tender & amazingly delicious!

Asparagus
1 pound fresh asparagus
1 tablespoon olive oil
salt and pepper to taste
Preheat an outdoor grill for high heat. Trim bottoms of
asparagus. Lightly coat the spears with the oil. Season with
salt and pepper to taste. Grill over high heat for 2 to 3
minutes, or to desired tenderness.

1/4 onion
1 can tomato soup
1/4 c. Heinz 57 sauce
Buns
Simmer onion and hamburger in frying pan until no pink shows
on meat. Add tomato soup and Heinz 57 sauce. Simmer about
1/2 hour. Serve on buns.

Easy Ears Of Corn On The Grill
6 ears of corn
6 tablespoons butter
6 12-inch pieces of Aluminum foil
salt & pepper to taste
Peel husks and remove silks form the corn. Soak in cold
water for 1/2 hour. Wrap each ear of corn with 1 tablespoon
of butter and salt & pepper in foil and fold ends tightly.
Put on the grill and close lid. Grill on medium high heat
for 20 minutes, turning occasionally to prevent blackening.

A few years ago, I had a recipe for a
parmesan cheese bread made in the crockpot.
It was delicious (and oh, so easy!). I shared the recipe
with a few friends but each of us seems to have misplaced
it. I would so much enjoy getting the recipe, and if it
isn't the same, that's okay. Actually, any bread recipe made
in the crockpot would be welcome.

Kathi in Nevada, Ohio, requested a recipe for a loaf of
round bread to hollow out and fill with spinach dip. Years
ago I made round loaves of bread filled with dip for monthly
teacher staff meetings and they were always a big hit.

If I were to do that today, I would make no-knead bread in a
cast-iron Dutch oven or covered casserole and that would
give a perfect shape to cut for the dip container. The
crispy crust would make a strong "bowl" and the soft inner
bread would be perfect to cut into dipping cubes.

The sauerkraut rye bread we love would be excellent for
this:

Sauerkraut Rye
.
3/8 cup rinsed, drained sauerkraut
3/4 cup warm water
1/4 tsp dry yeast
1 1/2 Tbsp oil
1 1/2 Tbsp brown sugar
1 tsp caraway seed
2/3 cup rye flour
2 1/3 cups bread flour
.
I process the flour and sauerkraut in my Cuisinart to blend
the sauerkraut totally with the flour. Then combine all
ingredients in a large bowl and follow the no-knead bread
directions. I couldn't find the newsletter date for the
directions, but you can search for "no-knead-bread" and find
the directions on dozens of web sites.

If I was making the bread in the conventional manner rather
than overnight no-knead process, I would increase the yeast
to 2 teaspoons.

Veteran's Hospital patients can't access
Library on Weekends (Salisbury, NC)
I don't know what the deal there is but it occurred to me
that we could take our used books to the VA and hand them
out to whoever wanted them. Of course I am assuming that the
public can still go into the VA hospital- it's been 37 years
since I was in one. Much better than selling them for a
quarter at a yard sale. Maybe gather from other people and
make a weekend day trip. I know I have lots of books that
could be enjoyed by someone just collecting dust. Just a
thought.

My sister-in-law told me she went to exercise class and
someone brought what they called a "breakfast
cookie." She said it was supposed to be
healthy and it had cinnamon, nutmeg and oatmeal in it. She
asked me if I had heard of such a thing and I told her I
would confer with my recipe experts. I am thinking it has
wheat flour or wheat germ. Can anyone out there help with
this?

Kolby is having a great day. He got to have his PICC line
removed this morning. He is eating and drinking well and had
his last scheduled meds this morning - so no need for the
PICC - Thank God!
Yesterday, Kolby had another chest x-ray just for good
measure. The doctors said his lungs had not changed since
the last x-ray. We are so glad because that means no
pneumothorax (air leaks) since the chest tube was removed.
We have a busy schedule everyday. Lots and lots of therapy.
Kolby continues to get stronger everyday. We will find out
later this week when we can expect to go HOME!
