Hi Karen in Ca. I have a recipe for southwestern corn
chowder. It doesn't have cream corn though, but I'm sure you could substitute
it. This serves 2 but can be doubled.
Southwestern Corn Chowder
2T. butter
1/2 c. onion
1/4 c. flour
1 3/4 c. chicken broth
1 t. cumin
1 can southwestern corn, undrained
1/2 can black beans, drained
1/2 c. milk
Saut?onions in butter until soft. Add flour and cook for 2 mins. Slowly add
broth and cook until thick. add rest and heat through. I hope this helps, I know
I love it.
