Quick, easy to prepare and fits into
most diet plans.
French Pound Cake
3 large eggs, separated
In a bowl whip up the 3 egg whites until
stiff and set aside.
In another bowl beat together:
the 3 egg yolks
3/4 cup sugar
3/4 cup butter (1 1/2 sticks)
1 teaspoon vanilla extract
Stir in:
1 1/4 cups all-purpose flour
tossed w/3/4 cup dried cranberries. (Any
dried fruit of your choice can be used.
I've used dried figs and results were
delicious)
Finally, fold in the beaten egg whites.
Pour into a 10" buttered round cake pan.
Bake 350 oven 45-50 minutes.
Dust w/powdered sugar before serving, if
desired. 10-12 servings
