This is the recipe that my husband's
grandmother used for Swiss Steak. It is
a little different than the usual ones.
Grandma Russell's Swiss Steak
Chuck Steak (enough to make 4-5 pieces
1/4 C flour seasoned with salt and
pepper to taste
2 Tbsp of canola oil
2 cans of stewed tomatoes
1/2 C pimento stuffed green olives
chopped.
Dredge the steak in the seasoned flour
and brown quickly in hot oil. Drain on
paper towel and clean oil out of
skillet. Put meat back into skillet and
add tomatoes and olives. Simmer on very
low heat for about 1 1/2 to 2 hours or
until the meat is fork tender. The
olives add a very unique flavor to the
steak. We usually serve it with mashed
potatoes (using the sauce as gravy),
salad and hot bread.
