An Italian representation of a Fastnacht
or Paczki.
Zeppole
Mix:
1 c all-purpose flour
2 tsp baking powder
1 pinch salt
1 tbsp granulated sugar
Mix:
2 eggs
1 c ricotta cheese
1/4 tsp vanilla extract
1/8 tsp nutmeg
Gently stir the egg mixture into the
flour mixture until a sticky, fairly
thick, batter forms.
Drop by tablespoons into the hot oil a
few at a time. Fry until golden brown,
about 3 or 4 minutes. They will turn
over themselves.
Lay on paper towels or brown paper bag.
You will find they absorb very little
oil. Dust with powdered sugar.
Serve warm or at room temp. If they last
that long. About 50 calories each.
