Zucchini with Bacon
In a saute pan heat:
2 tbs olive oil
Add:
4 slices of bacon, (regular or turkey)
sliced into thin strips.
Cook until crisp and remove bacon from
pan and set aside.
In the same pan w the olive oil and
bacon residue saute:
4 small zucchini until soft
2 garlic cloves, thinly sliced
Toss w/
Sauteed bacon
1/2 cup chopped basil
1/2 cup grated Parmesan or Romano cheese
Makes a wonderful side dish or topping
for pasta.
