Banana Cream Sponge Cookies
1-1/2 cups Bisquick baking mix
1/2 cup milk
1/4 cup sugar
1 package (4 serving size) banana cream
instant pudding
1 egg
36 chocolate candy kisses
Put all ingredients, except candy kisses
in a electric mixer bowl. Beat for about
3 minutes on low speed, until well
mixed, occasionally scraping bowl with
rubber spatula. Drop by teaspoonfuls
onto greased cookie sheets. Unwrap candy
kisses and gently push one in the center
of each cookie. Bake 8 to 10 minutes at
375º until brown around the edges and
slightly puffy. Remove cookies to wire
rack to cool completely.
Makes 3 dozen. Store in tightly covered
container.
NOTE: I have used pistachio instant
pudding in these for St. Patrick's
Day, and they are also very good.
