Soups for Grandma. I am fishing a lot now even in cold
weather as the Crappie or bunched up but here are two quick
soup recipes.
Industrial Strength Chicken/Potato Soup
Chicken parts enough to make one cup chopped
Water to cover
1 bay leaf
1 chopped stalk celery
salt and pepper
2 to 3 tablespoon butter
1/4 cup chopped green onion
1/2 cup chopped onion
3 cups water
2 large peeled potatoes sliced in 1/4 inch rounds
2 grated carrots.
Salt and Pepper
Chopped chives
Boil chicken in water to cover until tender with bay leaf,
chopped stalk of celery and salt and pepper (about 35
minutes). Meanwhile in a large skillet saute onion and
celery in butter until soft. Add 3 cups of water, carrots
and potatoes and simmer covered until potatoes are almost
tender. Pour in to a large pot with chicken, soup, broth and
milk and simmer covered until potatoes are tender. Add water
if necessary and garnish with chopped chives.
